Quick and Easy Potato Meal

There are times when I forget to plan dinner before leaving for work.  It’s days like that when I open the refrigerator or pantry and pull out whatever I see.   That’s how I came up with my quick and easy potato meal the other day.

 

I took four baking potatoes, washed and stabbed them then put in the microwave for three minutes, just enough to get them partly cooked.   When they come out of the microwave they will be very hot when they are cut in half so be careful of the steam.  After they are cut in half lengthwise, I let them sit a few minutes to cool and fry up three or four strips of bacon then dry the bacon on a paper towel.  Back the potatoes, I cut them in chunks and crumble the bacon in pieces and toss with the potatoes.

Add butter (or oil) to a fry pan then add the potatoes and bacon mix.  I like my potatoes really browned and crispy on the outside so I cook them on high heat.  When the potatoes are cooked on the inside, I sprinkle shredded cheese on them and lightly mix everything together on low heat.  The cheese melts around the potatoes and bacon and makes a delicious, quick and easy potato meal.

There are options for this meal, if you prefer, you could add sausage, ground beef or even small cut up pieces of cooked chicken. Add peppers and onions for even more taste! I call it my “whatever I have in the fridge meal”!

      The good part is Jeanine, this meal only takes about 15 minutes from start to finish! I love cheese and bacon, the more the better!
