TASTY TOPPED TATERS

I love potatoes and could eat them everyday but I like to prepare them different ways.  Usually since I’m in a rush to cook dinner, I look for quick ways to prepare them so it’s usually throw a potato in the microwave.  But I also love the potato skins and they don’t get crunchy in a microwave so I start out by microwaving the potato for 7 – 8 minutes, then put in a 400 degree oven for about 5 minutes to get the skin more hard and crunchy. I lather it with butter and what a delicious meal!  Lately, I’ve let my creative juices flow when it comes to making dinners and I came up with a quick, simple but very tasty topped taters.

The entire preparation of the potato including the baking time is less than 20 minutes and this is a meal in itself!

I start with a nice sized russet baking potato and microwave it for six to seven minutes.  After removing, I cut it in half, being careful because it will be very hot inside.  The next step is to mash it in the skins, no need to remove it and put it back. (I like quick and simple)

While the potato was in the microwave, I fried up a few pieces of bacon, drained it on a paper towel, then rolled it up in the towel to crumble it.  After adding a little butter to the potato, I sprinkled the bacon crumbles on top.

The next step was to add shredded cheese on top of the bacon.  I don’t measure how much I’m using, I just cover the bacon and potato and since I love cheese, I’m not stingy with it.

I have also heated up the oven to 400 degrees while preparing my creation and I pop my tasty topped tater in the oven for about 5 minutes or until the cheese is melted.

This delicious tasty topped tater only took about 20 minutes and it is the most delicious way to bake a potato in record time.  A meal like this costs less than a dollar!

      Oh yes, Nicole, I love my bacon! I even stock piled a few extra slices so it would be ready next time I made these potatoes. I crumbled up all the bacon and stored it in the fridge to save time. Thanks for stopping by!

      Actually these can be made totally in the microwave, I just bake in the oven for a short time to get the skins crunchy. But I have put them back in the microwave for only a few minutes to melt the cheese and they are still just as tasty! How I love quick and easy meals VJ!
