Sauteed Cauliflower

I love cauliflower and last week Publix had huge heads of cauliflower on sale for $1.68 so I grabbed one. I made a cauliflower and squash casserole that was enough for three meals for me! The third meal I added some broccoli to stretch it a bit but all the meals were so good! I only used a little over half the head and planned to make a salad from the other part. But today I changed my mind and I had sauteed cauliflower and it was such a quick and easy snack!

All I did was add some Avocado oil to the pan and when it was heated up I tossed in the cauliflower with blend of seasoning. I fried up two slices of bacon and added the crumbled bacon and shredded cheddar cheese to the cauliflower and drizzled a bit more Avocado oil over the mix.

I’m trying to get brave enough to do a video blog so here is the start of one! The sauteed cauliflower smelled so good as it was cooking and it only took about 10 minutes from start to finish for my snack to be ready to eat! For those who don’t eat bacon, don’t let that worry you because it will taste just as good if you leave that out.

My delicious sauteed cauliflower would have been a great meal but I wanted a healthy snack instead of sweets so I grabbed the cauliflower!

  1. So, you are right- I’d skip the bacon. But, I do need protein. I’ll try it with black beans and with cheese and will let you know how that cuts it. (I love cauliflower and broccoli, too! Almost as much as I love carrots.)
