I love cauliflower and when Publix had it on sale for $1.68 a head and grabbed some. I also had some home grown summer squash so I was ready to prepare a meal of cauliflower and squash but I didn’t have any idea what to make. I didn’t have a recipe but as I added ingredients I took pictures so I could remember how I made it!

I started by cutting the cauliflower florets in pieces and cutting the squash in chunks and steamed about half of the cauliflower for a minute. I saved the other half for another meal! Next I cut up four bacon strips in about 1″ pieces and fried that up and removed from the pan. I used the same pan with the bacon grease and slightly browned the squash.

Once the squash was browned I added the bacon back in the frying pan plus the cauliflower and about 3 tablespoons of cream cheese. Once that was melted with the ingredients I threw in a handful of shredded mozzarella and cheddar cheese. I cooked it on low until the cheese melted into the cauliflower and squash.

After everything was smelling delicious and the cream cheese and other cheeses were melted I put in a casserole dish. Of course I love cheese and bacon so I added another handful of the two cheeses and three more slices of fried, crumbled up bacon. Since I was cooking porkchops in the oven for hubby I put the dish in the convection toaster oven for about 10 minutes to melt the cheese and let the top brown.

My cauliflower and squash dish is done and it smells so good! The cheese is melted all through the casserole plus on the top with the crumbled bacon.

To finish off my cauliflower and squash dinner I served it with a side of corn on the cob loaded with butter. I have enough of the casserole left over to tomorrow’s dinner also plus I have the other half of the cauliflower and maybe I’ll make a salad with that. I’ll get three meals from the cauliflower that cost $1.68 so besides having a healthy and delicious meal it’s very economical also. My kind of meal!

A few months ago Lia and I came up with a Delicious Cauliflower and Squash Recipe similar to the one I made today but I didn’t brown it. Both were very good but I would have to vote for the one I made today as my favorite because the top cheese was browned as it melted.

  2. Hi Martha and Lia, great late post! Just in time for my dinner time. I make something very similar, instead of squash, I use broccoli. Now, I have to try it with the sautéed squash like you did.
