Small Amount of Delicious Left Overs

 

No matter how small the amount of delicious left overs we have, I love to become a magician and make something from it.  A few days ago, I fried up two ham steaks for dinner and made my delicious recipe for Hawaiian Sweet Potato Boats. There were only a few strips of ham left so I cut them in smaller pieces, not knowing what I would do with them at the time.

I like to make breakfast on Sundays so I pulled the eggs out of the refrigerator and was getting ready to get the bacon when I remembered about the left over ham.

I cut up an onion, added a small amount of butter in the frying pan and added the ham and onion to brown.  I whipped the eggs together and poured in the frying pan after I removed the ham.  My hubby likes plan eggs but I prefer an omelette so I divided the eggs and on mine I added some of the ham and onions plus topped that with shredded cheese. I flipped one side of the eggs over the top of the ingredients and just before my omelette was done, I added a piece of Swiss cheese over the top.  As it melted, it smelled so good.

Whether you like eggs with a side order of ham like my hubby does or an omelette loaded with ham, onions and cheese which is my favorite, both make a delicious breakfast. The amount of left over ham wasn’t enough to make a big meal out of but it was perfect and just the right amount left over for two delicious breakfasts.   An omelette in a restaurant costs between $5.00 to $9.00 but I figured our breakfast cost about $1.00 per plate.  Not a bad way to start the day.
