Pink Potato Salad

My mom made the best potato salad and everyone wondered why it turned out pink.  She had a secret ingredient that she added and I am going to share her delicious potato salad recipe with you.

This recipe serves about six to eight people, depending on how hungry you are!

8 – 12 potatoes (red or white skin)

6 – 8 hard-boiled eggs

Catalina salad dressing

Mayonnaise

Celery salt

Seasoning salt

Wash and cut potatoes in pieces (I don’t peel them) and boil until tender but don’t let them over cook or get mushy.  Boil the eggs at the same time.

Drain the water and put the hot potatoes in a large mixing bowl.

Pour Catalina salad dressing over the potatoes while hot, then shake the bowl to mix them up.  Add more if you want a tangy taste.

Refrigerate until chilled.

Chop up the eggs and add to the potatoes, add the celery salt and seasoning salt.

Mix together with mayonnaise.  I start with a few large wooden spoon fulls and add more as needed.

The Catalina dressing turns the hot potatoes an orange color and after adding the mayo, it turns a pinkish/orange.   It’s that simple and delicious!!

Every time I make mom’s potato salad I look up and smile at this delicious memory she left with me.

    Lovely! There is a potato (don’t know if you get it where you are) in the UK called a ”Kerr’s Pink” which you might assume was pink in colour. It is – but only the outer skin! The flesh itself is the normal potato colour.

      In the US we have a red skinned potato but the inside is white. I love all kinds of potatoes and my mom’s salad is delicious! Thanks for stopping by Bill.

    Sounds wonderful. I will have to try this some time. I haven’t made potato salad in a long time. I should everyone has always loved my recipe. I make one with sweet potatoes too. My macaroni salad as well. I make those more in the summer time.

    This sounds great. I am still trying to figure out the UK version of the potato. There are a few pink skinned ones.

      So you don’t have potatoes in UK? Some one else mentioned about a pink skinned one, we have a red skinned potato but the inside is white. Thanks for visiting Jacky!
