It’s Friday Story Time by Lia again and I’m so excited to share more of my garden. The other day I picked the first eggplant from my garden and I helped ma fry it up! Look how big it is and we have more that are almost ready to pick! The only ingredients needed besides the eggplant are eggs, flour and avocado oil. The first thing we do is slice the eggplant in thin slices. Ma likes to leave the skin on because it has nutrients in it, not sure
Last week pop and ma took me to Alligator Adventure and today we went to Huntington Beach SC State Park for Wordless Wednesday. We’re going on a few staycations while mommy is visiting her brother and sister in Indiana. She sure is missing some good times! I love cauliflower and last week Publix had huge heads of cauliflower on sale for $1.68 so I grabbed one. I made a cauliflower and squash casserole that was enough for three meals for me!
