National Dessert Day

I almost missed this important day,  luckily my granddaughter told me this morning that today is National Dessert Day!  So as soon as I got home from work, I started on two yummy desserts.

The first was simple, I mixed up a white cake mix as the instructions said and then I added 1/2 teaspoon of almond flavoring, pouring it into a 9″ x 12″ sheet cake pan.  Hubby doesn’t like sweets but the topping I add turns this into more of a coffee cake.  For the topping, I add 1/4 cup of brown sugar, 1/4 cup of granular sugar and a few shakes of cinnamon. I don’t usually measure, but I would say my few shakes would be about two tablespoons. After mixing those ingredients together with a fork to make sure there aren’t any sugar lumps, I sprinkle this mixture over the cake batter.  I then run a knife horizontally and vertically through the topping and cake, back for about 25 minutes and it smells so good while it’s baking!  The topping swirls through the cake mix and it’s better than sweet frosting.    This is a quick and easy cake to make and oh so good!

While my first cake was baking, I whipped up the second one.  This is my favorite,  Chocolate Mayonnaise Cake with Fluffy Frosting.   When I was young, my grandmother would make this cake and how I remember it being so delicious.  When I made it many, many years later, all the memories of helping my grandmother bake flooded back to me.   This is the most delicious and moist chocolate cake ever!  http://themarthareview.com/delicious-cake-my-grandmother-would-make/

The white cake was ready to come out of the oven and my chocolate cake was ready to go in.  My kitchen smells so good on National Dessert Day!

I loved the white fluffy frosting my grandmother use to make but I couldn’t fine hers.  After searching online, I found the perfect recipe at   http://www.food.com/recipe/fluffy-frosting-447874  shared by Sugar Fairy and is her recipe not only delicious but is quick and easy.

Now I was ready to make the fluffy frosting and while separating the egg whites from the yolks, one broke and the yolk landed in my egg white.  That was the last two eggs I had!  Hubby was so sweet to run to the store for more eggs!  While I whipped the egg whites and vanilla flavoring, I cooked the mixture of sugar, water, and cream of tarter.  When the peaks on the egg whites were ready and the sugar dissolved, I pure that into the egg whites and continued to whip the mixture until stiff peaks.

The cake smelled so good while baking and soon it was done.  When it was cooled I put a nice thick layer of the frosting on my cake and topped with coconut.

My chocolate mayonnaise cake with fluffy frosting, topped with coconut was soooooooooo yummy.  I love having a piece of this cake, warm from the over with a cold glass of milk.

So thanks to my granddaughter for letting me know it’s National Dessert Day, I made two yummy desserts today.  Anyone hungry?  What is your favorite dessert, is it cakes, cookies, pies, or something else?

  1. No fair! It’s almost 10:30 here now and NOT time to start baking. You made my mouth water! Shame on you… lol Both of these sound so yummy. If you were closer, I’d be knocking on the door with coffees in hand!

      No, you need MILK, especially for the chocolate cake! My granddaughter and I are working on a cookbook. Both recipes will be in it! Thanks for visiting Jane!

    those look SO good! yay for national dessert day (: my favorite dessert has gotta be ice cream… or coffee cake.. or cookies.. or donuts.. or all of the above? I can’t decide, lol! so sweet of pop to run and get you more eggs!

      I would have missed it too if my granddaughter didn’t message me! I don’t have a lot of time to back, but I had to find time for this one, especially since the stores got fresh milk, first time since the hurricane. Thanks for visiting Savvy Age!

  4. My very favorite, favorite, is sliced strawberries with a bit of sugar…but these sound yummy for people who can use wheat, egg, milk, and coconut products!
