It’s Bacon Time
It’s bacon time and when bacon goes on sale, I stock up. Last week it was on sale for $3.99 for a full pound, not the 12 oz. packages! But the downside is it takes me a long time to go through a pound of bacon so I came up with a way to freeze the strips individually.

Since I use bacon pieces in my omelettes, fried with cabbage, my one pan wonder meals and salads, it’s easier to cut the strips in half before freezing it. I can then take out how much I need and cut the strips into small pieces with scissors and toss them in a pan. They cook quicker and doesn’t even make a lot of grease.


My bacon strips are cut in half and next I lay 8 pieces on parchment paper the cover the bacon with another piece of parchment paper.


Next I careful roll it with two bacon pieces per roll. I put it in the freezer rolled up until it is frozen.
It doesn’t take long to freeze and then I put it in a freezer bag and date it. I can unwrap the paper and take out as few as I need. It’s so much easier than trying to break a package of frozen or trying to separate frozen slices.

Since I had a few bacon slices left over, I cut them into pieces, cooked them and added two eggs, topped with swiss cheese for a delicious breakfast.
If you don’t use an entire package of bacon at a time, this is a quick and easy way to go!
