Most of you know I love to find ways to save money and also not waste food items. Well the other day my Ultimate Blog Challenge friend posted a review about Hoomeet Silicone Baking Cups and it gave me an idea! In Jennifer’s blog she shows how she freezes eggs in the silicone baking cups, what a great idea to freeze in silicone cups! If you haven’t read it, you’ll want to check it out for when you have extra eggs.

I’ve frozen eggs before but I didn’t use the silicone baking cups but this way looks so easy. Her blog gave me an idea though. I had a few zucchini squash on hand to make zucchini bread but I ran out of time. I didn’t want the squash to go to waste so I decided to follow Jennifer’s idea and use my silicone baking cups! One thing when using silicone cups for food you want to make sure it’s “food grade” silicone.

First I cut the squash in pieces, skin and all, and put in my mini chopper. After it was chopped up I measured out how much would fit in a baking cup. It worked out they would hold 1/3 cup so I filled 6 cups up and put in the freezer.

After the zucchini was frozen solid, I carefully removed it from the silicone baking cups and placed them in a freezer bag. Since Lia likes to use the silicone baking cups for snack cups I was a few short so I also froze a cup of zucchini in a freezer container. I now have 3 cups of chopped, ready to use zucchini for the next time Lia and I make bread.

Speaking of zucchini bread, Lia makes a delicious lemon zucchini bread! She did this blog 1 1/2 years ago, she was so tiny! After filling a loaf pan with the batter, there was a small amount left so she made some bread using her butterfly silicone molds! It’s easy to freeze in silicone baking cups but just make sure to remember to use food grade silicone, I hope you enjoyed Jennifer’s instructions on how to freeze eggs and and my frozen zucchini!

    Lemon zucchini bread sounds like a delicious AND healthy treat!
    I’m curious what your experience will be thawing the finely chopped zucchini – will there be a lot of excess water or not?

      I’ve been freezing zucchini for years Tamara and it’s basically only good for baking or cooking. I haven’t had a problem with excess water, when making breac, I take it out of the freezer just long enough to “declump” and mix it up with the other ingredients. The lemon zucchini bread is delicious!

  3. I am glad you found the tip useful. Thank you for the mention. Trying to get the most out of our food dollars these days is important I think. Have you given any thought to dehydrating the shredded zucchini and then rehydrating it just before use? I haven’t done it personally, but that is a great way to make it shelf stable.

      You are very welcome Shepherds Run Farm. Hopefully you will have more readers since after reading my blog they checked you eggs out! Dehydrating zucchini, I didn’t even think about that and our new oven has a dehydarting mode. Guess what I’ll be doing with my shredded zucchini next?

  6. Martha, what are those cookie-like things Lia is working with in the middle of the post? This dividing and freezing the zucchini sounds great! I must find some of those food-grade silicone cups!

      Yes it is great Kebba and my blogger friend Lily even mentioned doing the same with pumpkin! Not sure what cookie-like things you are mentioning, is it the butterflies? If so those are silicone molds and Lia put the extra zucchini bread batter in them!
