It’s Friday Story Time by Lia again and I’m so excited to share more of my garden. The other day I picked the first eggplant from my garden and I helped ma fry it up! Look how big it is and we have more that are almost ready to pick!

The only ingredients needed besides the eggplant are eggs, flour and avocado oil. The first thing we do is slice the eggplant in thin slices. Ma likes to leave the skin on because it has nutrients in it, not sure what they are but if ma says it, it must be right. Then I whip a few eggs in a bowl to dip the eggplant slices in.

After the slices are dipped in the eggs it’s time to coat the eggplant with flour. It’s a little messy but ma loves fried eggplant so I’ll get my fingers all eggy for her.

When the eggplant was frying in the avocado oil, I just watched. It gets very hot so I know I can’t get near the stove. But look how yummy it looks when frying and after its done we put it on paper towels to drain. Then when we want to make eggplant parmigiana the eggplant is all ready and we just have to add the sauce and cheese. But do you know what else ma does? She eats the slices of fried eggplant just like cookies! Now that is one healthy snack! I did take a bite to try the eggplant but it’s not my favorite. But at least I always give whatever I’m cooking or baking a try!

So from garden to delicious fried eggplant but don’t forget I still have to clean up the dishes when done! I hope you enjoyed reading about my first eggplant from my garden!     That’s great, I love eggplant and often when making the eggplant parm. I use the leftover fried eggplant in cold sandwiches later in the day or the next day. Another way we love eggplant at our house is Ratatouille. Did you see the movie Ratatouille, it’s a very funny movie about a mouse that is a chef.

      I love eggplant sandwiches Chef William! I’m going to make Ratatouille, wonder how it would be topped with cheese? Also going to find that movie for Lia, we watched it years ago with her mommy! Thanks again for another great recipe idea.

      I hope you like this recipe Lily, it’s so easy and I like to fry a batch up and freeze them. It’s easier when it comes time to make a meal!

  4. I recommend dropping the flour for panko flakes- better for you and better tasting.
    Congrats on growing a fabulous eggplant.

      Well I had to search panko flakes Roy and the pictures they show with this breading looks deliciously lite! Do you suggest the wheat flour instead of white flour? I’m going to try this on pork chops!! We do have a few more eggplants so I’ll have Lia experiment with dipping them in panko.
