Easy Cinnamon Roll Coffee Cake

The other day I was looking for a recipe for cinnamon cake and while looking through some online sites I noticed the word “easy” on a recipe and that was enough for me to check it out. This quick, easy to prepare, made from scratch recipe uses ingredients that most already have in their cupboard. It only takes about 20 minutes to prepare and 30 minutes to bake. I could have eaten the entire 9″ x 13″ pan of coffee cake right out of the oven in 10 minutes! It smelled yummy while baking and looked scrumptious when I took it out of the oven.

Easy Cinnamon Roll Coffee Cake Recipe

Ingredients

  • Cake:
  • ½ cup butter, melted
  • 2 eggs
  • 1 cup sugar
  • 3 cups flour
  • 2 tsp vanilla
  • 4 tsp baking powder
  • ¼ tsp salt
  • 1½ cups milk

Here’s where the easy part comes in… combine all the ingredients for the cake in a bowl until well blended then pour in a greased 9″ x 13″ baking pan. The only change I made to the ingredients was I substituted almond flavoring for the vanilla.

  • Topping:
  • 1 cup butter, melted
  • 1 cup brown sugar
  • 2 Tbsp flour
  • 1 Tbsp cinnamon

When I make cinnamon cake, I usually use more of a dry, crumb style topping but this topping is an out of this world buttery, ooey gooey cinnamon with brown sugar that goes through the cake batter when baking. Mix all the topping ingredients together until smooth. I melted the butter, removed it from the heat and added the other ingredients, stirring until all smooth. I poured the topping over the cake batter and then swirled it through the batter with a knife. Bake at 350 degrees for 30 – 35 minutes.

Just look at the coffee cake while baking, can you almost smell it!?? While it was baking I came up with another idea for the next time I make this, I’m going to add some chopped nuts to the topping and see how that tastes.

OMG, when I took the cake out of the oven, the topping had melted down through the cake and looked so DELICIOUS!

  • Glaze:
  • 2 cups powdered sugar
  • 5 Tbsp milk
  • 1 tsp vanilla

When making the glaze, mix the three ingredients together until about the consistency of pancake batter and drizzle over the warm cake. I don’t usually add frosting when I make cakes and I didn’t make it for this coffee cake either. It is so delicious with just the cinnamon topping alone! But I came up with another suggestion, this would be delicious as a dessert with a scoop of vanilla ice cream on top!

This is the best coffee cake I have made and it’s so simple and yummy, it’s light and fluffy but doesn’t crumble apart when cutting into it. I’m glad I found https://cakescottage.com site and will checking out more recipes from them.

I had to chuckle when you talked about reading the word “easy”… it usually stops my scrolling also! However, not everyone’s “easy” is what I would consider easy. LOL —- But you’re right – this recipe is in my “easy” wheelhouse.

      Easy and inexpensive are two words that stop me in my tracks Lori! But yes, I’ve seen “easy recipe” and when read it, I realize my easy is not their easy! LOL But this was was easy and delicious!

    This looks so yummy. I think you are right about adding some ice cream to it and having it for dessert. 🙂
    I am going to send this to a friend. She teaches blind and visually impaired students how to cook and bake on there own, maybe she can use this recipe for one of her lessons.

      I like the recipe because it takes “normal” everyday ingredients that I usually always have. Nothing like seeing a great looking cake and finding it takes cream cheese or heavy cream, something that I don’t keep on hand.
