Cauliflower Rice

I’ve been on a cauliflower and cabbage kick lately, I love them both and I’ve finding delicious recipes. The other day my friend posted a picture of cauliflower rice and I knew I had to try it. Since I didn’t have any cauliflower I went to the store the following day to get a head. When I got home a realized I picked up a head of cabbage instead of cauliflower! I guess my mind was on the delicious fried cabbage with bacon that I make. Cauliflower Rice is so easy to prepare. Start with a head of cauliflower, remove the leaves and cut the florets in small pieces. Put them in a food processor and pulse for about 20 seconds. I check to make sure it’s all about the consistency of rice and if not, pulse for another 10 seconds at a time. I use a small amount at a time because it seems to pulse up quicker. If you add too much, it takes longer to rice and it becomes more like mash.

I add a small amount of butter in the frying pan then add the cauliflower. It cooks quick, within a few minutes. I stir it so the cauliflower rice lightly browns. When just about done, I add a seasoning mix.

That’s how simple it is! You can add many different ingredients to you taste but for me, I like it plain. Even Lia the Baby Blogger loved this!

The second time I made my cauliflower rice, I prepared it the same way but I added slivered almonds a few minutes before it was finished cooking. This is such a quick, healthy meal and so easy to prepare!

  1. I’ve done that before, I’ve set out to get one thing and got something totally different or similar yet different?!?!? Being Vegan myself, I love cauliflower rice, they even sell it premade today- for those who don’t want to clean up their blenders or food processors. But I think going on a cauliflower and cabbage streak is such a healthy streak to be on! I’ve been on a vegan cheese streak! HELP! LOL! Adding slivered almonds what a great idea! What about different spices? That’s so great about fruits and veggies you can do just about anything to them and you can have a healthy and satisfying meal! On my runs with my dogs the past week or two, I have realized that the local pizza place (just sold- and under new management) added cauliflower pizza and gluten-free pizza to the menu, now to get them to make it totally VEGAN! Yes, even with cauliflower and gluten-free it isn’t always vegan, yet you can have cheesy pizza and be vegan, with plant-based cheese! So frustrating for vegans like myself! But we manage!

      Using different spices would be great Pamela, making it more like a stir fry with veges might be interesting too. Once I find something new, I try to build on it and come up with other ideas. Thanks for stopping by, go get some vegan cheese, that might even be yummy with the cauliflower!

      I use to only eat raw cauliflower with ranch dip and steamed. There are so many delicious recipes I’m finding now Lillian! It’s not just easy and delicious, but healthy!

  3. It takes less time to make it rice, but cauliflower rice is a great alternative.

      I like rice too Roy but the cauliflower rice has that unique taste. It really doesn’t take much time to make and I freeze the rest of the head for next time.

  4. Looks yummy, Martha!! I have never tried cauliflower rice before, but I can see how adding something tasty to it, that you love (like bacon) might be just the thing. I’m glad you are making it work so well for you.

    Synchronicity! I almost bought cauliflower yesterday to do this (didn’t know it was called rice though!) but didn’t. Now I definitely will because it sounds delicious!!!
