Apple Crisp Topping Cookies

My church angels invited me to dinner and I decided to make some apple crisp to take for dessert. Well I tried a new recipe (might not be the greatest idea to try something new when at times like this) and the apple were mixes with cinnamon, sugar, cornstarch and lemon juice. Quick and easy!

I’ve made apple crisp numerous times and the topping has always been light and crumbly however this was different. It called for flour, butter, brown sugar and granulated sugar. Well it was super thick and not at all easy to top the apples with.

I spread the topping on best I could and baked it for 30 minutes. It turned out delicious and almost more like cookie dough topping.

Well with some of the leftover topping I made a few mini cupcakes and they were delicious! But I still had a bit left over so did an experiment. I added an egg, some water and a a splash of olive oil to change the consistence of the batter. It turned out to make the best apple crisp topping cookies.

They turned magically into the best cookies after I added chocolate chips and coconut. Next time I make this recipe I’ll make more cookies but add dried cranberries instead.
