What To Do with Extra Tomatoes
Today is Day 4 of the Cornerstone Content Blog Challenge and the topic is a post that solves a problem related to your topic. Now many of you know I like to think outside the box and this might be one of this days as a few days ago I was trying to come up with what to do with extra tomatoes.
I also love to come up with quick, easy and somewhat healthy meals. The other day I my dinner consisted of 2 salmon patties made with a pouch of salmon. I’ve mentioned before how I love that this salmon isn’t packed in water so it’s not full of liquid. It’s just salmon in a pouch that is so fresh when opened.
I mix an egg, a few bread crumbs and seasoning then flash fry in Avocado oil. While the patties are cooking, I cook up some brown rice. But I wanted to add some color and had been eating a lot of green vegetables so I decided to open a can of diced tomatoes that I keep on hand for meals like this.
This is my quick and easy dinner. I think the tomatoes did the trick for adding a touch of color, don’t you? This delicious meal only took about 10 minutes to prepare and cost less than $2.00.
I put the leftover tomatoes in a container and stored in the refrigerator. But now my problem is what do I do with the extra tomatoes? I knew I’d come up with a plan!
The next day I cooked up some T-Bone steaks with sauteed onions. They smelled so good as they were cooking and just before they were finished cooking I happened to remember about the tomatoes! I covered my steak with tomatoes and then mixed in the onions, covering the pan to simmer a few minutes.
To complete my meal I made cheesy broccoli and a tomato and cucumber salad with my new Rose Balsamic Vinegar. Again a delicious meal and I got to use up some of the left over tomatoes! Price was a bit higher than normal for me, the steaks were $7.83 for two but hubby’s and my dinner was about $5.00 each which is still not bad. A few day later I made meatloaf. I had a 1 3/4 pound package of ground beef in the freezer and that was perfect to make meatloaf for hubby, Alexandra and me.
As I was making the meatloaf, I had another bright idea. I would make his and her meatloaves! I added eggs, breadcrumbs and seasoning to the beef and mixed it all together. Then I divided the beef into two pieces. I made hubby’s up but when it come to Alex and my meatloaf I threw in the extra left over tomatoes! The meatloaf smelled so good while baking with the scalloped potatoes!
Another delicious meal completed with meatloaf, scalloped potatoes and corn. You can see the tomatoes loaded in the meatloaf and it was so good! This meal for three cost about $6.00 total but the best part is there was enough for hubby and I to have left overs the next night! So 5 meals for $6.00 is good in my book.
So I solved the problem of what to do with the extra tomatoes while preparing three different delicious meals. Do you every have something leftover and wonder how to use it up?

I like to stretch things Jeanine and find new ways to use things up. Hubby and I love meatloaf but I find the leftovers are better the second time around!
Good ideas Martha! I do Mexican rice sometimes with small diced tomatoes with corn and spices.
