Today is National Cheese Lovers Day

Do you have a favorite type of cheese you enjoy? Well get ready to make something cheesy because today is National Cheese Lovers Day. I like most all kinds of cheese but my favorite is Swiss Cheese.

When I visited my daughter in Virginia last November we went to Wegman’s, this place was amazing! Large displays of just about anything you could imagine but the cheese section is what got to me!

They had huge cheese wedges and wheels from so many different countries and varieties I had never even heard of! It was like being in cheese heaven and now I want a Wegman’s closer to me! Or I need to move to Virginia! LOL

A Few Yummy Cheesy Meals

This was breakfast. I fried an egg and as it was cooking I kept the egg in a circle in the frying pan. When the yolk got cooked to my liking, I covered the egg with a piece of Swiss cheese, covered the pan and watched the cheese melt over and around the egg. This was so delicious with a cup of hot vanilla chai tea.

This was dinner! I love liver with bacon and onions but decided to go all out and add broccoli and a baked potato. I had a bit of bacon left from my liver so I broke it in smaller pieces, mashed up the potato and covered it with butter and bacon then smothered it with a blend of 4 shredded cheeses.

Mock ‘n Cheese

I love mac and cheese but I also love mock and cheese! What is that you ask? It’s a delicious recipe using cauliflower instead of pasta and load it up with cheese. I wrote a blog a few years ago and my Mock ‘n Cheese recipe is in it! It’s not only good but cauliflower is good for you.

Cheesy Breadsticks

This is another recipe for delicious cheesy breadsticks but they are not your ordinary breadsticks. These are also made with a cauliflower crust and they are so delicious! If you want to see my step by step photos, it’s in my blog for Cauliflower Cheesy Breadsticks.

Recipe

Ingredients

1 head raw cauliflower

1/2 cup shredded Mozzarella cheese

1/2 cup grated Parmesan Cheese

1 large egg

1/2 tablespoon minced garlic (I used powder)

1/2 tablespoon fresh chopped basil ( I didn’t have any of this)

1/2 tablespoon chopped parsley (I didn’t have this either)

1 teaspoon salt (I never add salt to recipes)

1/2 teaspoon ground black pepper (I used a blend of pepper and spices)

3/4 cup shredded Mozzarella Cheese (save for topping)

Instructions

Preheat oven to 425 degrees F. and line a baking sheet with parchment paper or a silicone baking mat. (I used the baking mat)

Cut the cauliflower into florets and place in food processor. Pulse until it is the texture of rice. (Squeeze the raw, riced cauliflower in a paper towel if overly moist)

Mix the riced cauliflower, 1/2 cup Mozzarella and 1/2 cup Parmesan cheese, 1 egg, and the seasonings together until it holds together in a ball.

    Place the mixture on the baking sheet and spread out into a rectangle about 9′ x 7′ and 1/4″ thick.

      Bake 10 – 12 minutes, remove from oven and top with the 3/4 cup of Mozzarella cheese. Return to oven and continue baking until the cheese is melted and starting to brown.

      Cool about 10 minutes and cut in breadsticks. They turned out delicious and oh so cheesy!!
