Mock ‘n Cheese

I love cauliflower and cheese! The other day I saw a picture of what looked like mac ‘n cheese and I was super surprised to find out it was made with cauliflower instead of macaroni! It was called “Mock ‘n Cheese” and it looked so good that I had to try it! I didn’t have an exact recipe so I started adding some of the ingredients that I would use for mac ‘n cheese.

Recipe

1 head cauliflower

3/4 cup heavy whipping cream

2 tablespoons cream cheese

1 tablespoon butter

1 cup mozzeralla cheese

1 cup cheddar cheese

Broccoli crumbs (pieces from end of bag of frozen broccoli florets)

Cut cauliflower into small pieces and add to boiling water for about 5 minutes. Remove from heat, put in strainer and let drain.

Mix all the other ingredients together and cook on medium to low heat, stirring until all melted together and smooth.

Remove from heat and add the caulifower to the sauce and mix it together until the sauce coats all the cauliflower.

Spray an 8″ x 8″ baking dish with olive oil and pour the mixture in the dish. Sprinkle with your favorite cheese (I used 4 cheese blend) and bake at 375 degrees for about 15 minutes or until top is slightly browned.

This was SO good and SO cheesy! My mouth was watering as I watched the cheese bubbling in the oven and the top was golden brown, smelling so good!

I had my mock ‘n cheese with a bacon cheeseburger, crab meat salad and broccoli. The entire meal was so filling! Of course I’m the only one in the family that likes cauliflower so I knew I’d have leftovers but that’s fine with me.

The next day I cooked New York Strip steak with onions and had some of the left over mock ‘n cheese. It was better than the first day! I still have enough for at least two more meals so this is not only delicious and filling but it makes a good size dish to feed a family.

Of course every time I try something new, I come up with different ideas after it’s done baking. I think adding crumbled bacon would be delicious either with or without adding the broccoli crumbs. Then I was thinking of sprinkling the top with the broccoli crumbs while baking for a different option other than cheese.
