So Many Ways to Prepare Cauliflower
I love cauliflower and for years I’ve eaten it mostly steamed or raw. But lately I have found so many ways to prepare cauliflower and I wanted to share some of my delicious recipes with you.
Besides tasting good, there are many health benefits of eating cauliflower. It is high in fiber, promotes weight loss and good for colon health. Since cauliflower is a watery vegetable, it hydrates the body and it is rich in protein and minerals plus low in carbs.
With only 25 calories per cup, cauliflower is one of the most nutritious high fiber vegetables. It has Vitamin K for heart health, Vitamin C to increase body density and a good source of antioxidants.
Raw cauliflower
Off course my favorite cauliflower snack is just cutting the florets into pieces and dip in ranch dressing. It’s quick and easy to prepare plus a delicious and healthy snack.
Faux mashed potatoes
The first “faux” cauliflower recipe I made was mashed potatoes! I found this recipe from the South Beach Diet many years ago and even though I wasn’t on a diet, I was hooked on the mashed cauliflower “faux potatoes”. http://themarthareview.com/faux-mashed-potatoes/
Cauliflower breadsticks

Cauliflower rice
Cauliflower rice is my latest creation. It’s so quick and easy to make and you can add what ever ingredients you want. I cooked mine plan with a little butter and seasoning salt. My second time I fried it with slivered almonds. Both were delicious and filling. http://themarthareview.com/cauliflower-rice/
Ready for the freezer
What to do with the left over cauliflower if you haven’t cooked it for your meal………..no problem, just rice the florets, put in a zippered freezer bag, date it and freeze. I like to flatten the bags out before putting in the freezer because it doesn’t freeze in clumps. Fresh cauliflower can be stored in the refrigerator for up to four days, while if frozen, it’s good for a few months. I like having the cauliflower rice handy in the freezer for a quick meal.

I like broccoli better than I like cauliflower. But these are some interesting ideas for ways to get creative with it. I wonder if I would like the mashed potato version. Might try that one. I know it’s good to eat a variety of veggies and not just stick to a few.
The faux mashed potatoes are delicious Jeanine and if you didn’t know it was cauliflower, you might think it was potatoes! You can also add cheese to it for cheesy faux potatoes! Let me know if you give it a try.
You should try cauliflower, red wine vinegar, and colby cheese. (Of course, the cauliflower has been steamed)

Love the masked potatoes idea, I think I tried this once before, but I may need to try it again! The Cauliflower breadsticks look awesome! Got to try that! What about making cauliflower pasta or a cauliflower lasagna or something?!?!? How awesome would that be?!?!?
Oh now that sounds like something I need to tinker with Pamela! Maybe using the bread stick recipe, might have to tweak it, then add the other lasagna ingredients! I’ll work on that too! Thanks!

I use cauliflower rice all the time. Too bad we didn’t know about this years ago.

I absolutely detest cauliflower. Have not eaten cauliflower for decades. When my parents made me eat it, I gagged so much that mother sent me away from the table and I had to skip the remainder of my meal. But I did read your entire post on the demon vegetable and actually wrote down the recipe for cauliflower breadsticks and if that goes well I may try another recipe. Wish me luck.
It seems like we all had a dreaded vegetable when we were kids Douglas! But how you give the cauliflower another chance. The bread sticks are so delicious and you can mask the cauliflower flavor with extra cheese. Come on, give it a try and let me know your thoughts, hopefully you won’t gag this time!
Shake cauliflower in a bag with onion segments and a little olive oil, spread on a cookie sheet, bake 20 min or so. Add a little salt. Everything gets browned and tastes deelish!
