Shrimp, Crabmeat and Chicken Meals
Today I’m sharing a few meals that are quick and easy to make. I think I should open a short order diner since Rich and I have different tastes and I usually make two different meals! But I love to cook and experiment with food!
Shrimp over Rice
Rich and I both love shrimp and today I made the most delicious dinner that cost less than $4.00 for each! I boiled the shrimp then put it on ice. I peeled some and sauteed it with butter and Fish Monger seasoning and got fancy by adding it to a skewer and served it over rice like they do at restaurants. The side of broccoli was not only delicious but added color to the plate. I purchase 3 pound bags of large shrimp at Sam’s or Costco for about $13.00 so we always have it on hand, a 3 pound bag of broccoli spears for under $6.00 and the flavored rice pack is $1.00. I have enough shrimp and broccoli left for many more meals.
Crabmeat with Green beans
Lia loves crabmeat so I like to get the packages of artificial crabmeat for when she has a craving for some. I usually get the flakes but if all they have are the chunks it’s easy to pull apart. This can also be frozen so when it’s on sale I stock up.
I came up with a delicious meal with crabmeat and green beans. First I pull the crabmeat in small pieces and sautee it with avocado oil then I toss in fresh/frozen green beans. I add some Fishmonger spices and mix the two together as it’s cooking. Just before it’s ready to serve I add slivered almonds to the crab and beans. Stir as it’s cooking until the beans and the crabmeat are slightly browned.
It only takes about 10 minutes to make this delicious meal.
As I was looking through my blogs, I came across one written in March 2021 with crab cakes that Lia made! This is just another idea for the packaged crab meat and since it’s Throwback Thursday I thought it’s perfect to share it again!
Fried Chicken
I made fried chicken awhile back and while it tasted good, the coating mostly feel apart when cooking. So I tried again and it was perfect! Because I wanted to make sure the chicken would be fully cooked, I microwaved it on reheat for about 5 minutes. That way the chicken was partially cooked before I added it to the other ingredients. I started with flour and milk, coating the chicken legs with the milk then the flour and cooked it in avocado oil until browned. Rich said it was delicious along with homemade potato salad. This was another short order meal as I prepared salmon with lemon/butter sauce for me!
It’s fun to come up with different ideas for meals and with chicken it’s great to make chicken salad if there is any leftovers. This time there were no leftovers!
So there you have it, three quick, easy and delicious meals that you can add your choice of sides to!
That shrimp dish looks delicious. Maybe you should consider opening up a little diner. That sounds like too much work for me.

David would love living with you and Lia because he loves all Seafood and C only eats Popcorn Shrimp and I will not eat any of it. But my sister will. On her Birthday even though I hate Catfish I try and take her to get it because David likes it as well and doesn’t get it any other time. On his Birthday we go and get Chinese which Charlie. David and my sister like and as for me not so much. I end up with a Salad and White Rice and tiny bit of Pepper Steak. I am so picky.
