Have you seen the salmon pouches in stores? They are the next best thing to sliced bread! My granddaughter surprised me with some of the pouches and now I’m hooked on them. (Get it? I’m hooked as in fishing. LOL) It’s moist but not filled with water like the cans are so no draining is needed. Each pouch has 31G of protein and it only costs about $1.30. There is enough salmon to make two salmon patties or a salmon and rice casserole.

This is how I made my salmon patties…

You need 1 pouch of pink salmon, an egg and bread crumbs. I don’t measure but after you mix the salmon and egg just sprinkle enough bread crumbs and mix to get a good consistency to make a patty. I also add some seasoning to taste. I fry them in Avocado oil until brown on one side then flip and brown the other side. It only takes about 5 minutes from start to finish! (I am hooked on Avocado oil since I received this bottle to review!)

To complete my meal I add brown rice and some type of vegetable. The other day I had diced tomatoes. This meal costs less than $2.00 for a delicious dinner for me.

Salmon and Rice Casserole

Another option is to add one cup of cooked brown rice to a frying pan with a small amount of Avocado oil, add the salmon and some peas or broccoli. Heat on medium heat, mixing together while cooking. I like to sprinkle a bit of lemon juice on it just before I serve it up. I even top with shredded cheese at times and let it melt before serving. This is another under $2.00 meal and there is enough for me to get two dinners out of it.

Cauliflower salad with salmon

Another delicious and filling meal is to make a garden salad and add cauliflower plus the flaked salmon. I had some cauliflower left over so I combined lettuce, tomatoes, cucumbers, dried cranberries and slivered almonds in a bowl and mixed together. But then I decided to add a pouch of salmon! I drizzled some of my homemade raspberry salad dressing over the top, added shredded cheddar cheese and hard boiled eggs. I had my salad with a side of Milton’s Gluten Free baked crackers for another delicious and healthy meal.

This is my own recipe I came up with for Raspberry balsamic vinegar salad dressing. Add to mixing cup – 2 tablespoons Balsamic vinegar (I used Rose’ balsamic), 1 tablespoon red wine vinegar, 1/4 cup olive oil (I use Avocado oil) and 1 teaspoon dark brown sugar mixing all together until the sugar is dissolved. Add 4 – 6 raspberries (I use frozen ones) and mix again until the raspberries break up in small pieces.

I love fresh wild caught Alaskan Sockeye salmon but it’s not always in season so these salmon pouches make a great substitute.

If you like salmon, you may want to check out my blog about different types of salmon and marinades I make. http://themarthareview.com/wild-salmon-season/

I love the basic lemon/butter sauce but after experimenting with different sauces I came up with the most delicious Blackberry/Raspberry salmon sauce! It is SO delicious but the best part is you can use any leftovers as an ice cream or cheese cake topping! http://themarthareview.com/super-delicious-salmon-sauce/

Salmon pouches are not only quick and easy to use but they are inexpensive and make a delicious, healthy meal. Have you tried these? Of course wild caught Alaskan salmon is my favorite but the pouches are great for so many simple meals.
