Riced Cauliflower Meals

Since starting my healthy eating back in 2018, my menu doesn’t include as many potatoes as it use to. A great substitute are my riced cauliflower meals. I can turn this into a meal, a quick lunch or just a snack since I tend to eat smaller meals.

I make faux mashed potatoes from riced cauliflower and way back in 2016 I wrote a post on Faux Mashed Potatoes. They are delicious and healthy!

I rice my own cauliflower and freeze the individual portions in ziplock bags, date them and all I have to do is steam and eat! I’ve also found that Sam’s Club has frozen riced cauliflower with four packages in the larger bag. I prepared dinner of porkchops and steamed the cauliflower with a side of green beans.

My latest way I like to prepare my cauliflower is to sautee it in avocado oil and butter. Of course I had a few ingredients to make my meal colorful! This is one meal where I added fresh peas and dried cranberries to the cauliflower. I sometimes even add in tuna, salmon or shredded chicken plus slivered almonds!

Another tasty way is to add the riced cauliflower to meat drippings from steak or even toss it in the pan I’ve prepared my salmon with the lemon and butter sauce. It’s so good!

If you haven’t tried rice cauliflower meals, give them a try and if you’re like me you may love it more than potatoes and it’s healthy!

    I love Cauliflowers and we grow them in our winter garden.Will try riced Cauliflower .It sounds delicious Martha

    I love how versatile cauliflower is! Your dishes look so delicious!
    For a while I used to make cauliflower patties: riced cauliflower, eggs, shredded mozzarella and some herbs. Shape them into patties and bake in the oven. They can be kept in the freezer and re-baked.

      OMG why didn’t I think of that!!?? Thanks for your recipe, sounds delicious and will definitely be making cauliflower patties soon! I wonder if I should toss in some tuna or shredded salmon in the mix!

  5. Martha, this sounds like fun. And do you rice your own cauliflower? I bought some riced cauliflower that was frozen, and I never used it; had to toss it. But I’m only cooking for one now. <3

      I love cauliflower, both raw and cooked. I’d suggest you freeze in individual portions. I’m the only one that eats it here too! If you get the frozen bags you can “saw” it apart to freeze in smaller portions. When I rice mine one, I usually freeze a cup in each bag. I love adding protein to it also!

    I haven’t tried it yet but I might purchase one and when David and Charlie are gone fix it and serve it for dinner and see what they think of it. Because as a mom we have to be sneaky to get them to eat there Veggies.
