Pulled Pork Meal
Most know I LOVE to find a great deal when grocery shopping. The other day I hit the jackpot with an almost 9 pound pork roast. Regular price was $3.89 per pound but weekend special was 99 cents a pound! The roast cost me $8.64 , a savings of $25.32 from regular price!
I cooked the roast at 325 degrees all day Thursday, pulled it apart and what a big pan of pulled pork I had for Friday’s dinner!

The other side dish I prepared was potato salad using my mother’s recipe! She maked her salad a bit different by adding catalina dressing to the potatoes while they were still warm. I had one problem when I started making mom’s potato salad, I didn’t have any catalina dressing! Now I could have made it without the dressing but it wouldn’t be the same. So I decided to try my hand at making my own catalina dressing.
This is my Catalina Dressing recipe and I must say I was happy with the taste.
1/2 cup red wine vinegar
1/3 cup ketchup
1 tablespoon honey
1 teaspoon worchestershire sauce
1/2 cup of olive oil
1 teaspoon onion powder
I added everything in the blender and set on pulse until all blended.
I poured some over the drained potatoes and carefully mixed together. I was happy with the taste and how easy it was to make my own dressing!
The meal was delicious, there was enough pulled pork left over to last over the weekend and the best thing was having memories of my grandmother and mother with me while eating dinner.

I smiled when I read your post. Just last week I bought a pork loin and cut it into several pieces. Half went to my son who made the pulled pork in the slow cooker. Of the remaining, one quarter became a pork roast for my wife and me. I cut almost all of the last quarter into pork chops and froze as individually wrapped portions for the rest of the week. A small part was left that was mainly fat. I ask my son if he wanted to put it into the slow cooker. He said no, but suggested I cut it into thin slices and salt it and fry it up as bacon.
That is what made me smile. Your recipe just added strips of pork to the pulled pork.
A few pieces of my “homemade” bacon were obviously Canadian bacon and they were a perfect side to a fried egg for breakfast.
Sounds like you “stretched” your pork loin for many meals Doug! Actually my grandmother used fat back instead of back on her beans! We have the same tastes! Thanks for stopping by.
