National Zucchini Bread Day

Last night I realized today is National Zucchini Bread day! So I figured we had to make zucchini bread today but wait…. we don’t have any zuchinni!

Then during the night I remembered I froze some zuchinni in silicone muffin cups a few months ago! I put 1/3 cup of grated zucchini in each cup and after they were frozen solid, I removed the silicone cup and put the frozen zucchini in a freezer bag. When I needed a cup for bread, I just had to take three out and let it thaw. This is my blog about freezing in silicone cups. So I DID have zuchini and Lia and I could make bread today!

These three equal one cup, just what we need for our recipe. I put it in a strainer while thawing out so the water would drain out. Since they were small, it only took about a half hour to thaw. Now we’re ready to make delicious Lemon Zucchini bread! Lia has made this many times and we love the taste.

Lia is learning to read and she checks the ingredients. When I asked her how much flour she needed, Lia looked at the recipe and found we needed 2 cups of flour.

Lia’s got the ingredients in the bowl and mixing everything together. She said it’s okay to wipe the flour off on her apron. We found that using the frozen zucchini was not problem, no excess water since using the strainer while thawing it.

The recipe calls to use one 5″ x 9″ loaf pan but we like to make small ones. We got 5 mini loaves that we can freeze for later or Lia can surprise some neighbors.

Five delicious looking mini loaves of our lemon zucchini bread! The large loaf takes about 50 – 60 minutes to bake but the mini ones only take about 35 minutes.

Doesn’t our lemon zucchini bread look delicious? Of course the best way to eat it is right out of the oven with butter! If you want to give this recipe a try, you can get the recipe from Lil Luna . There is also a glaze for it but I prefer to takes the bread instead of frosting.

    That bread looks really good and I don’t think I’ve ever had it with lemon in it. I will have to try that. Great little helper there Lia 🙂 Thanks for sharing pictures.

      The lemon gives the bread a totally delicious taste Samantha. If you try it let me know what your think! You can also add lemon zest but we didn’t have any lemons!

  4. Those look pretty good- but, really- National Zucchini Bread Day? We have more special days nowadays than we know with what to do!
    But, enjoy that healthy looking bread- especially when it’s hot!

      I like to fry up yellow squash and zucchini with a little butter Anna. We actually only started making zuchinni bread a year or so ago when the garden was overflowing with zuchinni! Now I’m hooked on it when Lia bakes it!

  6. Martha, yum yum! And my neighbors are still giving away lemons! Fortunately, zucchini is easy to get, and I love it in all forms. Glad to see how successful your freezing the grated zucchini was. I must try that. Although zucchini doesn’t last long with me. 🙂 🙂 Thanks for the inspiration!

      Lia loves baking Melynda and her and I have so much fun and bonding when baking. Yes we have lots of delicious and healthy snacks from her baking.

      Yes I learned about freezing in silicone cups from another blogger and it’s perfect to freeze in the right portions for baking things!
