It’s Chili

The other morning just before 7AM it was 39 degrees outside! I would say it’s chili for South Carolina. It did warm up throughout the day but the cool weather feels so refreshing.

When it came time to make dinner I needed to come up with something quick and easy since we had an appointment to go to shortly. I decided since I had about 1/2 pound package of ground beef I had to use up I would make a pot of chili. Chili is one of my favorite throw together meals! All I need is a few cans of chili beans, some diced tomatoes, chili seasoning mix and ground beef.

I browned the ground beef and added the chili seasoning mix and let it cook a few minutes. Next I added 2 cans of dark chili beans and 1 can of light chili beans. Add 2 cans of diced tomatoes, mix all together and let it simmer for about 1/2 hour.

I like to top shredded cheese on my chili and microwave for about 20 seconds until it melts. When it’s chili outside, chili tastes good on the inside! My quick chili dinner cost about $4.00 to make and made enough for six servings. When I have more time I add peppers and onions to my chili but for a meal in a hurry, my quick chili is perfect.

    Looks delicious, Martha. I made chili too. I made mine with pumpkin as well as ground beef. I wasn’t sure how pumpkin spices would do with chili spices but it all turned out good.

  2. It has been cold here, too! I’ve had the heat on almost every night for a week or so. That chili looks SO good!! Yum.

    while we don’t eat meat, we have a very similar all-in-one comfort dish that is perfect for this weather.. i am guessing the chili warded off the chills!

  6. The quick chilli mix sounds delicious. What are the spices needed for this?Is it very spicy?

      We don’t use a lot of spices in cooking but for chili I use a packaged mild chili powder mix. It’s not spicy at all and topped with cheese is so yummy Amrita!
