Today’s Ultimate Blog Challenge suggested topic is to create a list. Now this list can be anything from destinations for summer vacations, reasons you need to blog or ways to avoid writers block as suggested by our host. But my list is Healthy Easy Recipes! A few of my favorite vegetables are broccoli, spinach and cauliflower so my list will start with them. I love making omelets but not just for breakfast. I can eat a omelet loaded with eggs, bacon, cheese and vegetables even for dinner.
1 – Broccoli Egg Omelet
This is my recipe (as best as I can remember since I don’t measure anything) for my broccoli and egg omelet. Whip 3 eggs and 1/4 cup of heavy whipping cream in a bowl, add 1/4 cup shredded cheese (your choice of cheese variety), 2 slices of crumbled fried bacon, 1/2 cup cut up fresh broccoli florets (frozen broccoli works also) and seasoning to taste. I fry it in avocado oil and top with more cheese and cover to melt. This is SO delicious, filling and healthy!
2 – Spinach Egg Omelet
Another delicious omelet I made recently was my spinach and egg omelet. This one I used two eggs with slightly less than 1/4 cup of heavy whipping cream, 1/4 cup shredded cheese, about half a can of drained spinach, 2 slices of crumbled fried bacon with seasoning to taste. This one is also fried in avocado oil and topped with shredded cheese, cover until melted and enjoy a delicious meal for breakfast, lunch or dinner! To have my cauliflower fix, I have a few cut up florets with bacon, cheese ranch dressing.
3 – Cauliflower Broccoli Omelet
Since I bought a fresh head of cauliflower and a bunch of broccoli florets I’ve been coming up with all kinds of yummy meals. Today I made something totally different. I cut up some of the broccoli and cauliflower and steamed it for 2 minutes. I added one egg and a splash of heavy whipping cream to a bowl and whisked together. After draining the steamed vegetables I added them to the mix and 1/4 cup of cheese. I mixed it all together and cooked it in a fry pan with a little butter. Just before it was done, I added some slivered almonds and tossed with the omelet. Of course I added a bit more cheese to the top, covered until melted and was this delicious! I even had a healthy lettuce and cucumber salad with my dinner.
4 – Sauteed Cauliflower
Sauteed Cauliflower is SO good! I made this last month and it’s been my go to recipe for not just a meal but a snack. All I did was add some Avocado oil to the pan and when it was heated up I tossed in the cauliflower with a blend of seasoning. I fried up two slices of bacon and added the crumbled bacon and shredded cheddar cheese to the cauliflower and drizzled a bit more Avocado oil over the mix. 5 – Tuna Melt Tortilla
Getting away from my omelets but this is another quick and delicious meal. I made tuna salad with white albacore tuna, mayonnaise, sweet pickle relish and shredded cheese. Mix all the ingredients together and spread of a tortilla. I sprinkled a bit more cheese on top of the tuna salad and put in the toaster oven for a few minutes to melt the cheese. I added a side of potato salad along with a garden salad also topped with some of the tuna. This doesn’t look like much but it was very filling.
From my meals I guess you can see I love cheese! I usually use cheddar or a cheddar mix and mozzarella shredded cheese but my favorite sliced cheese swiss. Also if you can’t or don’t eat bacon, all these recipes are easily adaptable with any other meat or just leave it out all together. It will still be delicious!

My grandduaghter is not an egg fan either Dominique but Lia, hubby and I love them.
Looks to me that these are more like bacon recipes than brocolli, spinach, cauliflower. I have added spinach to my omelet, but never cauliflower or broccoli.
I’m a bacon addict Roy! LOL But I have made omelettes withou bacon and added spinach. But I love cauliflower and broccoli.

Yum, all of those easy meals looked healthy and delicious! My family tries to eat Keto-style and it includes a lot of broccoli, cauliflower, spinach, peppers, onions, garlic, and cheese (in almost every recipe), just add a different protein, lol.
