Healthy Dinners
Since I shared some of my quick healthy breakfasts yesterday, I thought I would continue with some of my healthy dinners. Most of my dinners cost less than $5.00 per meal. These are a few of my favorite healthy dinner meals for seven days.
Wild caught Sockeye salmon with brown rice and mixed fresh vegetables is tops on my favorite list. NY Strip steak, smothered with onions with side of steamed broccoli is another delicious and very filling meal. This is one of my favorite light but filling dinners. Tuna salad on a bed of lettuce with a hard-boiled egg and watermelon chunks.How about some shrimp and mixed vegetables sautéed on the BBQ grill! Add a few deviled eggs to complete this yummy meal. Another quick but delicious dinner is an omelette. I add eggs, peppers, onions and cheese, wisk them together and when just about finished cooking, I topped with fresh tomatoes. The red skinned potatoes were fried in oil olive. Some meals I don’t even prepare meat like this one with a baked sweet potato, sautéed yellow squash from our garden and a BLT deviled egg. This is delicious, I add chunks of tomato, bacon, and basil to the egg yolk and mix with mayonnaise.Another quick and easy dinner is my homemade chicken salad sandwich on sugar-free wheat bread. I added some olives and raw cauliflower with a side dish of ranch dressing.So there you have a week of quick, easy, delicious and healthy dinners! What are some of your favorite dinners?

Thank you so much for the ideas, Martha! (How did you know that I was feeling stumped? 🙂 ) We were traveling on Sunday and came home late, but didn’t want to drive through a fast food place… again… so we stopped by the grocery store to pick up a bagged salad and some fresh salmon. A few minutes on the grill and supper was ready. I’ve forgotten about deviled eggs – thank you for that reminder too! It’s on the menu for tomorrow.
Glad I could help plan your meal Lori! I love salmon and like to make different marinades, my favorite is my raspberry sauce that I marinade the salmon and then drizzle it over the top when done. OMG this is delicious! I’d love to see your salmon dinner! Thanks for stopping by.
Obviously, the prices in South Carolina are lower than here.
I’d be hard pressed to find good salmon (fresh, not frozen) for under $14 a pound. I’m not complaining- it just makes the meal significantly higher than $5
I wait until the fresh wild caught Sockeye is on sale, usually for $9.99 per pound. I can get at least 2, sometimes 3 meals from a pound. But I love salmon and have been known to pay up to $12.99 per pound. I also look for the sales and extra dollar off stickers on the packages on beef. I can cut up a steak in thin slices and stir fry with peppers and onions for a few dollars. I love searching out sales, not sure if I’m cheap, frugal or just looking for a great sale. OMG! Martha your food is my food. I love your food combinations. Will have to come back here for some ideas after my 10 weeks diet plan. I love fish and salmon is my favourite.
