Happy 4th of July
Well there will be no fireworks in our area this year to celebrate a Happy 4th of July but that’s okay since I don’t even miss not being able to go places since the stay at home orders have been in place.
I’m actually enjoying the peace and quiet in our own backyard with colorful flowers instead of loud fireworks.
We can’t celebrate the 4th without a picnic now can we? So I’m sharing some tried and true family recipes that have been passed down from my mom and grandmother.
I will be preparing grilled chicken and I always make enough to have leftovers the follow day(s)! A local meat market had boneless chicken breasts on sale for $1.00 per pound in 40 pound boxes and chicken thighs and legs for $43.00 for a 40 pound box! I bagged it up into meal portions so I can pull out enough for how ever many meals I plan to make. These are just part of the bags of chicken I froze.
BBQ Chicken
I bake, fry or grill my chicken but my favorite is outside grilling! It saves from having my hubby do the dishes too!! LOL
I have a meat injector that I love to use for adding melted cheese into the chicken before I grill it. As the chicken cooks, the cheese melts even more and gives the chicken an ‘oh so good’ flavor.
Orange Potato Salad
Along with my chicken, I will have orange potato salad! What is orange potato salad you ask? Well it’s my mom’s delicious recipe she handed down years ago that has a secret ingredient. I’ll let you know what it is but don’t tell anyone! She would had catalina dressing to the potatoes after they were boiled but before they were cooled. Homemade Baked Beans
Baked beans are another great dish to add for a picnic. My grandmother made the most delicious homemade baked beans. When I was way younger, we had a huge garden and I would help my dad pick the beans, hang them in the upstairs of the garage to dry and then shell them with my grandmother. Oh the memories! Chocolate Cake
I’ll be adding corn on the cob, a tossed salad and deviled eggs to my menu for my 4th of July picnic. But the best part will be dessert! Have you had mayonnaise cake? This is another delicious favorite recipe from my grandmother. Yes this July 4th will be quite different from the old days of large gatherings and picnics, swimming, flyovers and of course fireworks. But we will have a great day regardless. Happy 4th of July to everyone!

It was a quiet day with just Rich and I but our tummies were full Julie! Plus we now have dinner for the next day with the leftovers!

This is the first 4th of July without my dad and on top of no, Fireworks shows I have been a tad bit down. But even though David is working late he has said he will take me into town so we can see the Fireworks and I can’t wait even thought it’s not going to be the same as seeing them in my town with my mother in law and her neighbors. As for cooking this year we have opted to pick up Hamburgers to take with us to watch the Fireworks. Thank you, David because I didn’t want to cook.
It’s hard when our loved ones aren’t with us but you know your dad is with you in spirit. Just sit on his bench and the memories will flow. How sweet of David to bring burgers for you. Enjoy the fireworks!
