Fried Cabbage with Bacon
I made fried cabbage with bacon and the total cost was about $3.50 for a huge pan full!
I started with a head of cabbage and cut it in half. Next I shredded it in thin slices and chopped them in smaller pieces and chopped up a small onion. The cabbage cost $1.29, bacon was on sale for BOGO free so one package cost $4.00. Now I only needed 8 slices so I used about $2.00 worth of bacon. That’s all the ingredients!
I cut the bacon in bite sized pieces and fried them and the chopped onion in my cast iron fry pan on medium high heat. There wasn’t much grease in the pan so I didn’t have to drain it, I just added the chopped cabbage to the pan. Stir the cabbage with the bacon and onion , add seasoning mix and let it brown slightly. Next I turned down the burner to medium, let it simmer for about 15 minutes, stirring occasionally so the bacon and cabbage blend together.
Since I’m the only one that likes cabbage, I only cooked half at a time with 4 pieces of bacon. The half cabbage made dinner for me to last 4 meals! It was DELICIOUS and so filling!
When I cooked up the other half of the cabbage, I added some diced fried potatoes that I was making for hubby. The half cabbage, bacon and potatoes lasting another 4 meals!
The big frying pan of cabbage and bacon figured out to be less than $1.00 for each meal, not a bad price to pay for a delicious, healthy dinner.
