February Healthy Eating Update
Today is Day 15 of the Cornerstone Content Blog Challenge and how fitting that the topic is to write a story about me. I just turned 72 years old and while I’m growing older, I refuse to grow up! I try to keep both my inside and outside as fit as possible and eating healthy is one thing that helps me do that. Most of my regular readers know I went on a healthy eating plan in July 2018. I did great on reducing sugars, white bread, potatoes and rice to correct my non-alcoholic fatty liver disease. Last November I needed to get back on track so I started a two month challenge, ending in January. While I’m not posting daily updates with my meals anymore, I am writing monthly updates with some of my delicious and healthy recipes. This is my February Update to my Healthy Eating Plan and some of me meals for the month. If you need to catch up on my progress before reading today’s blog, here is my January Healthy Eating Update.
I love to cook and come up with new meal ideas that are not only healthy but delicious and fun to prepare. Of course Chef Lia is usually right beside me helping me with my progress. Meals for the first two weeks of February were more pick on whatever was in the fridge or pantry since our kitchen was getting new cabinets and countertops. But in the end it was so worth it to have a beautiful, organized kitchen. But once I got back to preparing meals, I made a quick, easy and delicious dinner of steak with onions, fettuccini and carrots with Lia’s help. The best part it only took about 15 minutes to prepare and cost less than $5.00 for two meals.
Sometimes I like just a salad and vegetable for dinner. This salad with a side of sautéed yellow squash. It doesn’t look like much but it sure is delicious and filling.
One of my favorite meals is salmon but when fresh wild caught salmon isn’t available I reach for salmon in a pouch! One thing about cooking, I have switched to using Avocado oil instead of regular vegetable oil, I can cook on high heat and it doesn’t burn or splatter. One pouch makes two good sized patties and I like to add a side of brown rice. When I made this meal I wanted to add some color so I added some canned tomatoes. They are delicious when I mix them in with my rice.
What better way to use up some of the left over tomatoes by adding it on top of the steak while cooking. It was so good, reminded me of the swiss steak my grandmother use to make. I love broccoli so I added a side of that topped with cheddar cheese. http://themarthareview.com/whats-for-dinner/
This is a meal some don’t care for but I love liver topped with bacon and onions! I’ve also been adding slivered almonds to green beans and sauté together. This is such a healthy and filling meal along with the brown rice. This is a blog I wrote back in 2017 with some information on liver being a rich source of protein.
I was still working on the leftover diced tomatoes so I made meat loaf and added the leftovers in the mix! It was delicious and a great way to stretch the can of tomatoes into three meals. I love healthy breakfasts that start my day. Sometimes it’s as simple as wheat toast with Simply Fruit Spread and a cup of spiced tea. Other times I’ll grab the oatmeal and sprinkle cinnamon on top.
Of course an omelet is perfect for any meal. I love them for breakfast or dinner! This was so good, I mixed eggs, broccoli, crumbled bacon, shredded cheese, onions and whipping cream together and pan fried it. Top with shredded cheddar and Mozzarella cheese and add a side of potatoes fried in the bacon grease.
One more meal I had for February was left over lasagna when my granddaughter made it last month. I froze meal prep dinners and I think we have one container of two meals left. So these are some of my February Healthy Eating Update meals and I’m still staying on track watching my sugar intake. One other thing Lia and I have been snacking on is her micro-greens that she planted from seeds. They continue to grow and we’ll grab a few for a snack before bed! Salads are among my go to dinners, too. Of course, I add some valuable protein- an 8 ounce piece of cut-up rare steak, rare tuna, salmon, hard boiled eggs and cheese. Any one of the four. With a great home-made dressing.
I love adding hard boiled eggs and always cheese Roy! Salads are so filling and I also make a delicious raspberry dressing!
Good for you with your healthy eating challenge! I need to get back on mine — so much stress lately that I have regained 20 pounds! It’s definitely easier with fewer people in your house that have different diets.
I did great when I started in 2018, lost over 24 pounds but last October I realized it was creeping back so I had to nip it in the bud! I’m back to where I was when I lost it before and I’m keeping it off this time Angie. I love my quick and easy meals and even though I’m the only one eating them I can add a few extra foods for the rest of the family.
It sounds like you’re doing great, Martha!! I really admire what you have been able to accomplish with your healthy eating plan! The meals do look both filling and delicious.
