Delicious KETO Breakfast Sandwich

I love to try new recipes and most know Lia loves to help me cook! Today I’m giving a shout-out to one of our own Ultimate Blog Challenge members. When I meet someone, I never remember when or where, I just know that once I connect with other bloggers it’s like we’ve been friends for a long time. Today I’m shouting out to William Chaney or better known as Chef Chaney who has a great FB page where he shares delicious KETO recipes. https://www.facebook.com/ChefWilliamOnline/ I tried his delicious KETO breakfast sandwich recipe and wait until you see it!

Last night I made his KETO Bacon and Avocado Breakfast Sandwich for dinner. Of course I didn’t have all the ingredients so I substituted for some and also mine didn’t look as professional but it tasted delicious!

I’m use to cracking an egg and cooking the yolk and white together but this recipe is different. It calls for beating the egg whites until stiff peaks. This also gave me a chance to try the wisking attachment for my Little Oster Chopper that I recently received. It worked great! http://themarthareview.com/my-little-oster-chopper

Mix the egg yolk with softened cream cheese, after mixed good then blend in the stiffened egg whites and gently mix in with the yolk mixure.

Pour about 1/4 cup of the egg mix on a lined baking sheet and bake about 15 – 20 minutes. Chef Chaney suggests to cut in circles but mine were almost circles so I left as is.

While the eggs were baking, I fried up the bacon and cut my tomato to have them ready. I didn’t have an avocado so I omitted that.

After the eggs were done, I took half of them and added cheese to them and baked for another 2 minutes to melt the cheese. The recipe called for sharp cheddar cheese but I didn’t have that so I used the next best thing in my cheese drawer. I recently won a prize pack of all different cheeses so I used the Haverty cheese and it was delicious.

After the cheese melted I added the bacon and tomato and covered it with another baked egg. So the eggs turns into the bun! I had three bottoms with melted cheese that I added the bacon and tomatoes but only two tops. I made six pieces of egg, what happened to the 6th one? Oh, Lia grabbed it off the plate and started eating it! She loves eggs and it was gone in no time!

When I finished making my bacon and egg sandwiches I had some extra egg mixture left so I poured that on the baking sheet in a rectangle and baked it. While chatting with Chef Chaney he mentioned that he freezes leftovers! So after it cooled I cut the eggs in pieces and froze individually for Lia to have for breakfast, lunch, dinner or snacks!

      Breakfast at dinner is one of my favorite meals Jeanine! The cool thing is freezing any left over baked eggs. Lia had one of the frozen pieces today and all I had to do was microwave it for about 15 seconds!

      The thing about sandwiches like this, you can substitute what you want or like Roy. If you can have pork, add some sausage or even load it up with spinach and tomatoes! I like to be creative even with recipes. Thanks for visiting.
