Crabmeat Salad
As a recap for my January Ultimate Blog so far…. week one I wrote about my Meal Ideas, week day I shared about my Photography Tips I learned with my new Nikon P1000 camera and last week all about Organizing Ideas. While I was writing a variety of those blogs I would come up with other ideas but I was determined to stay on track with my weekly mini series. So now the last week of the challenge will be a little bit of this and that! Today I’m sharing my quick and easy crabmeat salad recipe. This is great if you need an easy lunch or snack.
I start with a package of imitation crabmeat, flake style. Depending on how big the flakes are, I pull them apart to make them smaller. Take two cups of the crabmeat, a handful of cooked frozen peas and some crumbled bacon (you can omit this if you don’t eat bacon). Blend all together with mayonnaise and sprinkle with seasoning of your choice.
I serve mine on a bed of lettuce surrounded by crackers. I love Milton’s gluten free Multi Grain crackers, they have a great taste and are healthy. Another option for this meal is to serve it on a tortilla. Just a quick, easy and delicious snack!

Lia loves crabmeat so as she was making the crab cakes, she was eating pieces of it also! But she saved enough for dinner!

It is yummy Danwil. Actually I think the artificial crabmeat is pollock but still delicious.

Can you eat fish Amanda? Artificial crabmeat is made from pollock. It’s so good and easy to make, hope your husband enjoys it.
This would be a quick Salad for David to take to work the next time they host a dinner. Which both Charlie and I will pass on because we don’t care for Seafood which David does like. As for the Crackers I will try them as they would be a healthy snack and go perfectly with the Diet I am on and easy to serve during Homeschool as a quick pick up snack.
I make the same salad idea with chicken, salmon or tuna Glenda. It’s a quick and easy meal and the Milton crackers are so good and have so many flavors!

Martha, I am now very fond of imitation crabmeat. They have stopped making it with wheat (which I am allergic to), and it’s now widely available. I make a similar crab salad to yours, and in mere moments, the Krab is one of the things I’m seeking on my grocery trip. Thanks for more great food ideas!
