Chili Is Not Just for Chilly Weather

The other day when it was 90 degree weather outside`, I decided I wanted to make chili. Some people say it’s more of a winter meal but I say chili is not just for chilly weather. I actually took a poll with my Facebook friends and all of them said chili or homemade soup are good anytime! So chili was on the menu for me!

My recipe is very easy and a batch lasts hubby and me at least two meals each. The one pound of ground beef was on sale for $2.99, 2 cans of diced tomatoes and 3 cans of kidney beans were 50 cents each and I used half an envelope of chili seasoning mix which costs $1.00. So for about $6.00, I got four meals worth.

I start by browning the ground beef in a deep frying pan and add diced onions if I have any on hand. After the ground beef is browned I sprinkle the seasoning mix on top and stir it together.

Next I add the 3 cans of chili beans, both dark and light, including the juice and 2 cans of diced tomatoes. Mix these into the ground beef and cook on low heat for a few hours.

I check it often and stir in between cooking. (Plus I have to taste it while cooking because it smells so good!)

When the chili is ready to serve, I top mine with shredded cheese and put it in the microwave until melted. This is such a easy and inexpensive meal whether the temperature is hot or cold! $1.50 for a delicious filling meal isn’t bad at all!

  3. I brown the onions first- and then add the beef. It tends to integrate the flavors more completely.

      I love the fall weather! We are originally from way upstate New York and miss seeing the changing colors of the leaves. Nothing more fun than to rake leaves and jump in the pile only to have them scattered all over! Then to finish the day with a hot cocoa!
