Birthday Cake Granola Cookies

So this is what happens when we go on a major pantry re-organization! My granddaughter and I decided to clean out the pantry since there was so much stuff that we couldn’t even get to! She likes trying new cereals, granolas and snack bars and they were all over powering our little pantry. Alexandra pulled out three opened bags of granola that were still good but she didn’t really like them. So as we were getting ready to toss them, I looked at the Birthday Cake Granola and decided to give it a try. It was slightly stale but delicious. So one thing led to another and I decided to try something, I made Birthday Cake Granola Cookies!!

I figured if I took my oatmeal cookie recipe and just substitute the granola, they should be quite tasty and tasty they were!

I have a very quick and easy stove top oatmeal cookie recipe with only 6 ingredients so that’s where my invention began. Did you notice they are chocolate?? Here is my recipe, not sure where I got it from but it’s so yummy!

Ingredients

2 cups white sugar

1/2 cup milk (I used 2%)

4 tablespoons of baking cocoa

1 stick of butter

1 teaspoon vanilla

3 1/2 cups of oatmeal

Directions

I use a stainless steel pot and add the sugar and milk, mixing them together then adding the butter. Cook together on medium heat, stirring until it comes to a boil. Next I added the cocoa and mixed it with the ingredients until all were well blended.

Remove from heat and add the vanilla and….. well this is were I substituted the oatmeal for the granola and mix well.

Drop on silicone paper (or wax paper) and let cool before storing in an air tight container. NO BAKING AT ALL!!!!

The hint of birthday cake in the granola made these cookies delicious and I must warn you, they are very rich in chocolate! Me, one who loves chocolate, can only eat one cookie because they are so sweet! But did I mention delicious? Oh yes, so chocolatey AND delicious and no baking so you can eat your cookies within minutes!

Since I wasn’t sure how the cookies would turn out, I cut the recipe in half and it made 24 cookies. So a full batch makes about four dozen delicious Birthday Cake Granola Cookies in less than 20 minutes. If you try them, let me know how you like them!

    Loved it. It is simple and I will sure try it for my son. Chocolate is the main ingredient which will attract kids. My son will sure going to share it with his friends.
