POTATO SKIN BOATS
I made delicious potato boats for dinner yesterday! They were so delicious so I decided to post my Wordless Wednesday Potato Skin Boats but also put the recipe at the end of the photos. The end results are DELICIOUS! Hope you enjoy the photos and the recipe for potato skin boats!
Potato skins are not only delicious, but high in potassium, iron and niacin. However, a word of caution, they can also be high in fat and sodium if using cheese and bacon. Depending on your diet, you will want to add what is best for you.
I love potato skins more than the potato and it’s so easy to make my potato skin boats. I cut my steak into small pieces and stir fry with peppers and onions.
1. Bake your potatoes, then scoop out the potato from the skins. (You can either eat that separately or save to make potato pancakes)
2. Add the steak and vegetable mixture to each hollowed out potato skin.
3. Top with shredded cheese and put back in oven for a few minutes until melted.That’s it, quick and simple! Enjoy your potato skin boats dinner!
Potato Skin Boats are such a quick, easy and inexpensive meal. I purchased a family pack of beef and packaged it into serving sizes so the meat cost less than $2.50 for a meal for two. The onion and pepper along with the potatoes was less than $1.00 so for under $4.00 you have a delicious, nutritious dinner. There are other combinations you could add to this recipe, just let your imagine go! How about a vege potato skin boat, chicken with peas or one filled with ground beef and rice? It’s great for using left overs to make your Potato Skin Boat since it doesn’t take much to fill a boat. These are like a pot pie but instead of a pastry crust, you have a potato skin! OK. I will try this with the sweet potatoes. (I wont’ eat “white” potatoes- ever.) And, I will have to omit the cheese, if I elect to use the steak- or I could use the cheese and skip the steak.

They look so good. My mother would just take the middle out mash them and put them back and I love potatoes like that.

Sounds yummy. I’m not a big fan of the skin of a potato though. Does it get crispy when you bake it?
Nona, if you cook it in the microwave, the skin stays soft. When I’m in a rush, I start it that way, scoop the potato out and put in the filling then bake in the oven for about 5 minutes to get the skin crispy. I love them either way, but I do prefer them to be on the crunchy, crispy side. Thanks for stopping by.
