What a Dinner

I do cook more than just eggs and stir fry but my oh my, it’s so good!   Today I made such a quick, inexpensive meal and what a dinner it was!

Once again, I’m using what we had in the refrigerator so I started pulling things out one by one.   I started with an onion, a pepper and a summer squash, then a few potatoes.  I know, we are taught young not to play with our food but I couldn’t resist building food legos! LOL  That should be good to turn into something interesting.  Next I added some bacon and eggs to the mix.

I cut the onion, pepper and squash into slices and sit them aside while cutting the potatoes in pieces. The bacon was thick cut so is was more like ham.

I started cooking the bacon on my induction burner (I’m loving this so much) and it cooked so quick without much grease.  After I removed the bacon, I added the potatoes right in the same pan and cooked them.   I’m amazed how quick food cooks and holds it’s flavor.

When the potatoes were done cooking and nicely browned, the next to go on the induction burner was the onion, pepper and squash.  I could eat these everyday! I sprayed the pan with a small amount of oil, added the vegetables and put on the induction burner.    You have to make sure the magnet that comes with the induction burner sticks to a pan you are using so I keep the magnet on the refrigerator next to the induction burner.  The Ozeri pans I have work perfect because they are magnetic.  This is another great product I love, nothing ever sticks to the pan!

While the vegetables were cooking, I scrambled up some eggs and cooked them on the stove top.  Just before they were finished cooking, I threw in some of the sauteed’ peppers and onions and crumbled bacon pieces.  I topped it off with cheese, covered the pan for a few minutes to melt the cheese and what a dinner we had!

I didn’t price out the cost of this delicious but I know if was very reasonable and so filling.  So once again, I used up things in the refrigerator,  made a meal that could have been for breakfast, lunch or dinner and didn’t cost more than a few dollars for dinner of two.

      Eggs were on sale for 50 cents a dozen so I loaded up on them! So many great meals can be made with just a few items. I saw a potato souffle with eggs on TV today, that’s my next venture! Thanks for stopping by Savvy Age.
