Vegetables are Growing Great

It’s been almost 8 weeks since we planted our backyard raised bed garden and the vegetables are growing great!

The weather in South Carolina is in the 90’s already and the heat index is over 100 degrees so hubby is giving the plants extra water when the sun goes down.

We have just about picked all the lettuce so I’m thinking of planting more when it gets closer to fall so we can have a late crop of lettuce. We sure got a lot of salads from our lettuce plants this year.

The yellow summer squash are steadily growing larger as is the zucchini. I can’t wait to freeze the summer squash so I can cook fresh squash throughout the winter.

This year we planted three varieties of eggplant. The Japanese eggplant is purple and grows about the size of a cucumber. Then we have the regular purple eggplant plus the white eggplant that both look like a giant pear. We have baby Japanese ones and a few white ones growing so far.

The peppers seem a bit slow this year, maybe because of the too soon hot weather but there is still time for them to get growing.

Meanwhile, the tomatoes are hanging in and growing! We don’t have good luck with them and usually don’t grow them but I wanted to try one more time.

This is an after thought! I saw an advertisement for purple tomatoes and ordered the seeds. We just planted them last week so not sure if we will get tomatoes or not. I may have to bring them inside and continue growing them throughout the winter.

As I mentioned in my last garden update, we have never grown Okra until this year and since they were started with seeds, it’s taken them a bit longer but the feelers are on them and growing great!

Since we planted the cucumbers a few weeks after the the rest of the garden, they are just beginning to have baby cucumbers! Since our garden isn’t very large, I plant the cucumbers on the edge and let them crawl onto the grass so they have more room.

So there you have our little raised bed vegetable garden update. For now I’ll just sit here and watch our garden grow in the 100 plus degree heat!

    your garden is definitely looking good.. the weather here is still flaky… but i am keeping my fingers crossed for the tomatoes and peppers we have planted ..

      Thanks Vidya, we’re getting a bit concerned since it’s been over 100 degrees and will continue at least until the end of the week. Hubby waters in the morning before the sun comes up and by mid afternoon they really need a drink. As soon as they get water in the evening, they perk back up. Crossing my fingers that the heat doesn’t get the them! Can’t wait to see your garden!
