V is for Vegetables

Since we went to the farmers market recently, I had to write about V is for Vegetables for the A to Z Challenge.  Okay, we were all taught not to play with our food, but I couldn’t help making this little onion lady with a pepper skirt and cauliflower hair.

The fresh vegetables were all looking so good and I love this time of year when the growing season is here.  This is what we bought at the farmers market, everything was so fresh.  The leaf lettuce is huge and only $1.25 per head. Hubby loves salad and we usually have it most every night with dinner.

There are many different kinds of vegetables but my favorite is stir fry with squash, peppers and onions. It’s quick and easy to prepare plus it’s very filling.  I cut the vegetables in slices and either pan stir fry with a little butter or cook them on the grill.  For this meal, I used yellow squash, zucchini, onion, green and red peppers, a very colorful dish.

They are delicious either way, on the stove or on the grill. For the top picture of my stir fry, I added carrots since I didn’t have red peppers.  My favorite is grilling on the barbecue.   I use a grill mat so the small pieces don’t fall through the grates and they brown perfectly. Plus there are no pans to wash!

Who doesn’t love a stew cooked in a crock pot.  With our work schedule, I like to start a stew before work and when we come home, the house smells delicious and dinner is ready. I add onion, peppers, carrots, celery and potatoes to the stew beef.

Cauliflower is one of my favorite vegetables. I love to cut the florets into pieces and dip it in ranch dressing.  But another great way I like cauliflower is when I make faux mashed potatoes.  If you didn’t know you were eating cauliflower, you would think you were eating potatoes.  Check out the recipe and my photos for Faux Mashed Potatoes.

If course, I can’t forget about smothering steak with onions, so delicious. Even Ronald McDonald on the plate is smiling over this meal.

      I like to support our local farmers and growers. Even if it costs a bit more, I’d rather shop where I know the produce is fresh. Waiting for our garden to get veges! Thanks for stopping by Brenda.

  2. All your veggies look so delicious, Martha! But I especially love the squash stir fry. It’s still early for summer squash here, but I love it when they’re in season 🙂
