Totally Healthy Dinner

I prepared my favorite meal today and it turned out to be not just inexpensive but a totally healthy dinner.   Dinner consisted of:

Alaskan Wild Caught Salmon  –  Salmon is high in Omega 3 and the American Heart Association recommends that adults have two servings of Omega 3 per week to maintain optimal health benefits. Omega 3 promotes healthy joints and skin and can reduce the risk of heart disease.  Salmon also has vitamins B-12, B-6 and D.

Whole Grain Quinoa – Quinoa provides a higher amount of antioxidants and it’s gluten-free. It provides essential vitamins, minerals, and fiber, which help to regulate the digestive system.  Quinoa contains iron, B-vitamins, magnesium, phosphorus, potassium, calcium, vitamin E, and fiber and it’s also high in protein.

Corn on the Cob – Corn is a good source of nutrients. It has a high amount of vitamin B-1 , B-5 , folate, vitamin C, phosphorus and manganese.Plus it’s a good source of dietary fiber.

 

Now for the preparation of this delicious and totally healthy dinner.

Alaskan Wild Caught Salmon was on sale at Publix for $8.99 per pound and the piece I got was $4.65.   I love the taste of salmon so I don’t use many spices or marinades.  I melt a small amount of butter and put the skin side down to brown it. I LOVE the skin when it’s browned and crunchy.  After the skin is browned, I flip it and cook until tender.  One more flip to the skin side and this is when I  pour melted butter on the salmon filet and squeeze fresh lemon over that.  That’s it, quick, easy and delicious! (Plus it’s an inexpensive meal)

I have been on a Quinoa kick since my grandson instructed me the best way to prepare it. The first time I cooked in the microwave and it turned out okay but could have been cooked a bit more.  The next time I prepared it, I still cooked it in the microwave but added a bit more water and it was softer than the first.  On my third attempt, I cooked the Quinoa on the stove top and what a difference!  It was very tasty and no crunchy pieces so I think I got the cooking down now.  I do add a little butter and seasoning salt to it and it was delicious with the salmon.

I finished the meal with corn on the cob, again smothered with butter.    This entire meal cost less than $6.00 and it was not only delicious but healthy too.

  1. I never use the microwave. (OK. That’s a lie- unless we are talking about cooking. I use it to defrost- only partially- items. And, it prepares ALL my popcorn. Otherwise, I find its ability to cook things properly severely wanting.)
    I also would reconsider using frozen fish. Unless i knew who and how that freezing was done. (It is more than likely that your frozen fish has been frozen TWICE.)
    But, I’m with you- except that our corn season here in Virginia has just ended, taht would be a great meal to have tonight. Oh, wait, I’ll switch the corn for sweet potatoes!

      I have cut way down on using microwave Roy. I use it to start my baked potatoes, then finish in oven. Pop corn is a must for the microwave! I too don’t use frozen fish unless it’s fresh fish I’ve bought and freeze it myself. I didn’t know you lived in Virginia, our daughter lives in Manassas! Did you see my sweet potato boat recipe blog a few days ago? That was delicious also! Thanks for stopping by.

    Do you use anything to grease the pan with? We also bake/broil our salmon. I might want to give it a try in a pan.

    I’ve never had Quinoa myself. My mother in law tried to fix it a couple of times and can never get it right.

      I just add a small amount of butter to the pan Nona, butter is my thing! While browning the skin side, I put some butter and lemon juice on the salmon before I flip it. I’m working on the Quinoa and after three tries it’s much tastier. Let me know if you try your salmon this way!

    That is quite an economical meal, salmon is sooooooooooooo expensive in our area!

      Normally salmon is very expensive here too Savvy Age, and I don’t like farm raised. I watch for sales and grab it up! This meal was less expensive than a McDonald’s meal! Thanks for visiting!

      My first few attempts wasn’t the greatest Kim, but I’m persistent and the third time was much better! The nice thing about Quinoa, it’s Gluten free for those that need that. Let me know if you try it! Thanks for stopping by my kitchen.
