Time for Breakfast
The past few days I’ve been sharing about my healthy eating so since it’s time for breakfast I would like to give you some healthy and delicious breakfast ideas.
One of the most common meals for breakfast is eggs and I like to make omelettes with bacon, onions, cheese and top with fresh tomatoes. There are times I add fresh fruit to the plate and serve with hot tea. But some of my other breakfasts are simple to prepare and filling.
I love fruit and these are a good for breakfast when you need something quick to prepare. I cut up apples, drizzle with honey and top with organic coconut and cinnamon. I also like cut up bananas mixed with dried fruit, sliced almonds and organic shredded coconut. Another yummy fruit dish is cut up fresh peaches and bananas topped with organic granola.
Oatmeal is another one of my favorites and for variety I change the toppings. Sometimes I sprinkle it with organic cinnamon and other times I use organic, sugar free strawberry jam. Both are delicious!
There is nothing better than hot out of the oven banana bread! This batch I added applesauce to the recipe and it was so moist. When I’m rushing to get out the door, I grab an oat and honey or peanut butter protein breakfast bar. They may be small but the sure are filling.
These breakfasts sure a different from my chocolate cake or brownies that I use to eat before I started my healthy eating plan last July! Do you eat a big breakfast or eat on the go? What are some of you favorite breakfast meals?

One of the things that I like to do if I am in a hurry is to make refrigerator oats and then I vary the flavors, based on what ingredients I have in the house. Right now, I have a yummy jam, so I would add that, along with almond milk, cinnamon, and a little vanilla. Sometimes, I like to add nuts and raisins. The raisins become soft and plump over night.
When I make omelettes, I like to add vegetables, such as onions and mushrooms, plus some cheese. And, just before I fold the omelette, I like to add fresh herbs that I pick from my little herb garden.
I received a sample package of refrigerator oats and they were delicious Alice! I’m with you, I love adding jam on my oatmeal or cinnamon. I need to get more of the oats so I can have them ready in the morning. Thanks for the suggestions!

I am not sure your choice of ‘organic’ coconut, oatmeal, or granola means anything other than higher cost choices with zero additional benefits.
I don’t use organic oatmeal, just certain toppings like the coconut and granola because according to the nutrition facts on the package, they have less sugar, cholesterol, sodium, and carbs. I also like the organic coconut because it’s finely shredding and unsweetened, something I can’t find here with non-organic. Thanks for visiting Roy.

I love oatmeal too Amanda! We always carry baggies with Cheerios for our great granddaughter, she loves them too!
