Dinner Prepared in 30 Minutes
This is a quick and easy thirty minute dinner from preparation to the dinner table. It was not only easy but inexpensive as well. I purchased a package of three boneless rib eye steaks and grilled them yesterday and since we only needed two, I knew there would be leftovers. I enjoy coming up with interesting meals with left overs and they are also inexpensive.
I started with the rib eye steak, four red skinned potatoes, an onion and some yellow beans freshly picked from our garden. I decided to cut the steak in pieces and have fried potatoes.
The steak was a good size but when I cut it in pieces it seems to make even more. After I cut it in small pieces, I set it aside until the rest of the dinner was almost ready and mixed with the onion.
When I’m short on time, I need to find ways to cook faster. I came up with the idea to microwave the potatoes for 5 minutes so they well be partially cooked. I then cut them in half and let them cool a few minutes before cutting in small pieces. They are very hot when they come out of the microwave, so be careful when you cut them up. I love butter so I added a few tablespoons of butter to the fry pan and added the potato pieces. If you prefer, you can use olive oil.
Next I cut the onion in small pieces and in another fry pan I sautéed the onion until it was brown. I took a few spoonfuls of the onion and added to the potatoes to give them more flavor. After the potatoes were browned, I covered them for another ten minutes until they were completed done. Since the steak was already cooked it just needed heating up so after the onions were cooked and the potatoes almost done, I added the steak to the fry pan with the onions.
I love fresh vegetables from our garden and we had yellow beans ready so hubby went out to pick enough for dinner. They are easy to prepare, just cut the ends off then cut each bean into small pieces. While the potatoes were cooking, the beans were boiling in water.
I don’t have an actually cost on this dinner for two but the package of the three steaks were $12.00 so I had $4.00 worth of steak, many $1.00 for the potatoes and onion and the beans were free from the garden! So my thirty minute dinner for two was quick and easy plus healthy and inexpensive.

This will be going in our cookbook Alexandra! I am so hooked on healthy meals lately and most are inexpensive. I’m finding good deals on steak and even paying $12.00 for 3 steaks makes 2 dinners for 2 people. So it’s way under $10.00 a meal, less than fast food! We gotta get our book going! 🙂
