T is for Tomato Soup and Tacos!
As I wind down near the end of the alphabet for the A to Z Blog Challenge, today is T is for Tacos and Tomato Soup!
Once again, I think of something that brings back memories of when I was a child. My grandmother would make tomato soup with bags of gold in them! Yes, bags of gold! She would take a square chunk of cheese and wrap her homemade biscuit dough around the cheese and drop into the bubbling tomato soup. While the biscuit cooked, the cheese melted and when I would cut the biscuit open, the cheese would ooze out into the tomato soup. Talk about delicious, I want to go make some bags of gold now!
My granddaughter actually gave me the T words and it started with just the tomato soup until she came up with her making tacos. Okay, so we’ll add tacos to the tomato soup! This is her delicious bowl of tomato soup she made but instead of bags of gold, she smothered the soup with cheese. Her and I are so much alike, the more cheese the better!
So since my granddaughter is such a great cook and it was her idea for tacos, I’m going to share her recipe with you.
First she cooks the beef, adds onions and peppers with her seasoning. Sometimes she uses taco shells but other times she will just pile her creation on a tortilla. You can eat them flat or fold them up, she has no rhyme or reason, just throw everything together and eat a delicious taco!!
This is one where she actually put cheese on the bottom and melted it on the tortilla before adding the meat. Add a dollop of sour cream and you have a yummy meal. It even goes great with tomato soup!

Not flat or folded, rolled or folded ?. but yup! super simple recipe and you can add or take out whatever you want! you can use chicken instead of beef, add rice if you want, the possibilities are endless ☺️ sometimes we add salsa too ? but the motto to definitely live by: the more cheese, the better ????

I like plain, old-fashioned tomato soup with no fancy ingredients added. I also like minestrone which is nearly tomato soup!
I have to add cheese to just about everything Bill, and I even make my tomato soup with milk instead of water to make it thicker. I too like minestrone but that didn’t start with T. LOL Thanks for stopping by.

I shouldn’t read food blogs so close to supper! And of course now I want tomato soup and tacos – neither of which I currently have the makings for.
We need to use up some spinach and some bean sprouts that we bought the other day. We did a tropical stir fry last night with lovely fresh pineapple and mango, so I think we’ll try to find a unique way to use them without stir frying…

Oh Martha, mango is an incredible and very unique fruit! I find it has a citrus taste similar to oranges, but there is this almost pine-like note to its flavour that I’ve never encountered elsewhere.
Mangoes are rather expensive here in Canada – usually around $1+ per fruit. And a good part of them is the pit. So I tend to wait for a special on a whole case of them, which is why we happened to have them on hand this past week 🙂
