Summer Squash Patties
I came across a recipe a few weeks about for summer squash patties. Me being the curious one and having so many summer squash, I decided to give them a try. I started with four fresh picked summer squash, washed them and cut the ends off.
The next step is to cut the squash in chunks and chop it up. My new Ninja Kitchen System is awesome and I chopped it up using the auto mode.
After the squash was chopped up, I measured out one cup servings and put in my hamburger patty freezer tray. This is perfect to making meal portions. I had enough for seven meals! After it’s frozen I put them in a plastic bag and it’s easy to pull out how many I need without them being frozen together.
Summer Squash Recipe with Flour
1 cup of chopped summer squash
1 egg
1/4 cup of flour
Chopped onions to taste
After I mixed everything together, it was a bit “soupy” so I added a little extra flour.
Seasoning to taste
Makes four good sized patties
I fried them in butter and avocado oil until browned on one side then flipped them over like a pancake! I was excited to try them so I cut one right from the pan and ate it! It was so good!
I added some shredded cheese to two the patties and it was so good. My dinner was grilled wild caught Sockeye salmon with lemon/butter sauce and the summer squash patties. What a filling and delicious meal.
But after dinner I got to thinking, maybe I’ll tweak the recipe by adding Italian flavored bread crumbs next time! But I didn’t stop there, wait until you see what else my squash patties had in them! The next day I made another batch and it was SO MUCH MORE TASTY!!
Summer Squash Recipe with Bread Crumbs
Since this batch had been frozen, I put the frozen clump of squash in a strainer and let any liquid drain out, then I patted it with a paper towel to remove any excess moisture.
1 cup chopped summer squash
1 egg
1/4 plus a bit more Italian flavored bread crumbs
Chopped onions to taste
Chopped garden fresh tomato
Handful of shredded mozzarella cheese
Seasoning to taste
I prepared this batch the same but substituted the bread crumbs instead of the flour. Then I added the chopped onion and tomatoes plus the shredded cheese before cooking them. The bread crumbs added such a great flavor!
I added a side of Lia’s fresh carrots and fresh green beans for a delicious dinner. I think the Italian flavored breadcrumbs, the tomatoes and cheese in the mix before cooking was the reason they tasted so much better. I made this Sunday afternoon and since my surgery was the follow day I ate a lite meal but it was so delicious and filling! A meal all from garden fresh vegetables couldn’t be any better. Now I’m thinking next time I may add some flaked salmon or tuna and have a complete meal of fish and vegetables all in one pattie!
Freezing Zucchini
With an over abundance of zucchini, I also chopped up five of them and froze in one cup portions like I did with the summer squash. Lia loves to make zucchini bread and now all I have to do is pull a portion out of the freezer, let it thaw and Lia will be baking her delicious lemon zucchini bread!
I love coming up with new recipes and I have five more meal portions to make summer squash patties and it will be with bread crumbs!

Hi Martha! The squash patties look fantastic. One of my favorite veggie dishes is squash casserole, and this is like a fried version! I can’t wait to try them!
I love squash cooked anyway, I’ll have to try it in a casserole Cindy! Both versions were great, but the bread crumbs one were super delicious!
I bet! The squash casseroles I have had, use bread crumbs and egg. They seem to go with the squash and help absorb the moisture. Some have been almost a squash dressing, which is also tasty!
Yes I did find that the bread crumbs absorb moisture more than the flour does Cindy. Plus the added flavor is delicious. I’ll have to try the squash casserole sometime.
This is interesting. I like both summer squash and zucchini, but I am always looking for more interesting ways to cook them! I will have to check this out!
I like both too Dominique but of these two versions, the bread crumb recipe is by far the best.
My friends just gave me a slew of summer squash. Thanks for the ideas with what to do with them!
Let me know if you try them Roy! Another way is to just slice them, dip in flour or bread crumbs and egg. Fry in avocado oil and either eat them as is or let them cool and eat as cookies!! YUMMMM!!

I hope you’re feeling better after your surgery!! Those recipes seem like they would be good. I particularly liked the amended recipe for the squash. I don’t know if I would want it as a patty. I like softer, more moist foods, usually. But the ingredient mix sounds yummy!
Actually if you don’t brown them as much as I did (I like them crispy) they would be soft. The center is very soft Jeanine!
