Stretching a Ham
Spiral cut hams were on sale for $1.25 last week so off the BiLo we went to get one. I got an almost 10 pound ham for $11.15. I love a sale but I also love to coming up with multiple meals to save even more. This is what I call stretching a ham for a week!
For Saturday dinner, we had baked ham, sweet potatoes and corn. But it’s the left over meals that I got excited about, coming up with different ways to stretch the ham for other meals.
Sunday we had ham sandwiches with a garden salad and Monday was a fried potatoes with onions, fried slices of ham and scrambled eggs.
Tuesday I made sandwiches again, but instead of cold ham, I added ham slices on wheat bread, topped with mozzarella cheese and broiled it. Talk about yummy!! We took Wednesday off from ham because we also have a big chicken salad on that day. Back to ham and eggs on Thursday and then Friday was the big finale.
I fried potatoes and onions again, fried hams pieces and made the most delicious omelette that I will share my recipe with you.
After frying up the onions, I took a small amount out before adding the potatoes. I did the same with the ham pieces after frying it up.
I added three eggs, the onions and ham pieces to a measuring cup and mixed them all together, then I added a handful of mixed shredded cheese. Add a small amount of butter to the frying pan and when it’s melted, pour the egg mixture in the pan.
Cover and cook until light and fluffy, flip over and sprinkle with more shredded cheese. I covered it for a few minutes until the cheese was melted.
Since hubby doesn’t like cheese, I scrambled his eggs and added a side of ham and potatoes with onions. There is still enough ham left for a few sandwiches and the bone for home-made split pea soup. So far, I stretched the $11.15 ham to make six delicious dinners please a big pot of soup. I’m always looking for ways to save on groceries and meals and I think I stretched this spiral ham quite well!

Oh I love those spiral hams. I no longer cook them because of a pork allergy in my family. I do enjoy them if someone else makes them and invites my family over.
They had the regular unsliced hams on sale for $1.00 but I figured for an extra 25 cents per pound was worth it being it was all sliced and had a super glaze package. Sorry about your family’s allergies, we go through so much pork. Thanks for visiting!

Yes you will Alexandra, it was SO good. I put a small amount of butter on the bread before I added the ham slices. You have to broil in the oven or toaster oven, won’t work in the microwave! I was you could have been her too! Maybe next time. Thanks for popping in!
