Shopping for Ham
A few days before Easter, I went shopping for ham for our dinner. We usually get a spiral cut ham but once I got to the grocery store my thriftiness kicked in! The spiral hams were $1.58 per pound and the regular ham that wasn’t already sliced was 68 cents per pound. I didn’t even need a calculator to figure how much I would save if I didn’t get the spiral cut ham.
The ham I picked out was about 12 pounds and cost just over $8.00 compared to the spiral cut would be almost $19.00! Sure the spiral cut has all uniform slices that look pretty on the platter but I can cut slices that look just as good. I had a can of crushed pineapple that I was using part for coleslaw, part for my candied sweet potatoes and that left some extra for my ham glaze. I added brown sugar to the pineapple and covered the ham about 20 minutes before it was done. It smelled so good and tasted great!
I knew there would be leftovers so this is when I started planning my meals with the leftovers. I packed up a good amount for my granddaughter to take home for her and Stevie’s Monday dinner and she turned their leftover meal into cute little ham, egg and cheese sliders on Hawaiian dinner rolls. Our Monday meal was basically the same as Easter dinner since we had leftovers from the other menu items.
Tuesday came along and I made a delicious omelette. I fried up pieces of ham and mixed it with eggs and shredded cheese. Just before it was finished cooking, I topped it with swiss cheese and diced tomatoes. Since hubby doesn’t like cheese, he opted for just the fried ham and scrambled eggs.
We took a ham break on Wednesday since that is our salad dinner night but I still have enough left over ham for a few more meals. I haven’t decided what to prepare yet but I’m thinking of maybe ham and potato casserole or maybe split pea soup. For an $8.00 ham, we had Easter dinner for four hungry people, Monday dinner meals at both my granddaughter’s and our house and Tuesday omelettes for our dinner. Plus there is enough for a few more meals. I’m not sure how much our granddaughter has left but I would saw this little piggy went a long way!

Something about leftovers Jeanine, they seem to taste better than the first round!
