Revealing a Cake Recipe without Eggs

For Day 2 of the Cornerstone Content Blog Challenge I’m revealing a cake recipe without eggs. Throughout this challenge I will be grasping at straws on some of the topics but hey it certainly is a super challenge that challenges me! But it’s also Day 2 of the Christmas Blogmas challenge!

Our great grandboys, Noah and Alek spent the day with us on Saturday and you probably already figured out that I asked if they wanted to do some baking. 4 year old Alek was all excited and ready to go but 5 1/2 year old Noah decided to opt to be the taste tester when the baking was done.

So this is the first time Alek and I have baked and he was so excited and ready to go as soon as he put Lia’s Christmas apron on since she was visiting her grandma and grandpa. This was the beginning of our Christmas baking! We got all the ingredients measured and the mixer ready.

First Alek poured the flour and butter in the bowl and waited for them to blend together.

Next step was to alternate the flour and milk, mixing each time. Alek carefully turned the mixer on perfectly as soon as he added the ingredients.

Now it’s time for the fun part, tasting the batter and licking the beater! By the looks on Alek’s face he approved of it so far. The video shows it all!

So I forgot to mention in the beginning, we are not making cake or cupcakes, we are making mini donuts! Lia got a donut machine for her birthday and I’m sure she wouldn’t mind Alek using it. We’ll even save her a donut or two!

So now it’s big brother Noah’s turn to do the donut taste testing. He takes a small bite, let’s it savor in his mouth and then said it was delicious! Alek’s donuts passed the taste test!!

Look how proud Alek is with the donuts he made! We even rolled some in sugar! I love how he did his own taste test after rolling the donuts in the sugar. We decided when we make these delicious donuts again we will sprinkle red and green sugar on them when we deliver them to our friends and neighbors!

This is the recipe we used from Mommy’s Home Cooking. Of course I did have to make a few substitutions because I didn’t have all the ingredients needed but again, I’m always up to a challenge! First I only had white vinegar instead of cider vinegar so I found I could use lemon juice in place of the vinegar. But after checking, you can use white vinegar but the acidity is a bit different so I used the amount called for and added 1/2 teaspoon of lemon juice also. The other thing I didn’t have was self rising flour so I found a site where it says to add 1 1/2 teaspoons of baking powder to every cup of regular flour so I added 3 teaspoons. After we finished baking, I noticed a note at the end of the recipe saying to add 1 teaspoon if no self rising flour but ours tasted fine. Alek and I were pleased with how easy the recipe was and how great they tasted. I’m sure we will be checking out more recipes from Mommy’s Home Cooking website.

  1. Those pics are the cutest thing ever! Especially the taste-testing ones!! I know what you mean about the blog prompts being a challenge. My original headline for today’s post started with: “now revealing: cozy lifestyle blogger returns,” but I thought about people finding it later and wondering what the heck I was talking about, LOL. Hopefully, it seems like enough of a reveal without my saying so.

    That looks delicious! And the recipe looks like something that I want to try, especially for my month long plant-based diet challenge in January! The grandboys look like they are really enjoying their roles (baker and taste tester)!

      That sounds like an interesting challenge Alice! I doubt if I could do just plant based but I just may give that a try! This recipe is delicious and I’m looking for new eggless ones so Alek can bake and eat them.

  4. Martha, how wonderful! An eggless cake batter! I had forgotten about self-rising flour, which I used a lot when I was dating a British man. I guess Brits use a lot of self-rising flour. I can’t wait for someone to come up with self-rising almond flour! Imagine the splash that would make for people on keto diets? I always love seeing your adventures with your tiny relatives. Thanks!

      Hmmm, you gave me an idea Kebba, come up with a self rising almond flour! I have a bag in the cupboard, I’m got to start experimenting. This eggless recipe was delicious!

      I was surprised at how good this recipe tasted Brenda. I’ve had store bought desserts without eggs and they seem dry but these are supper yummy!
