Quick Healthy Breakfasts
Do you have a problem finding something for breakfast? Before I started my healthy eating, I would either skip breakfast totally or grab a brownie and glass of milk. For the past three months, that has totally changed. I try to eat foods that are good for me and my non-alcoholic fatty liver disease. But of course since I don’t have a lot of time, I need quick healthy breakfasts. This is what my breakfasts consist of now, no more brownies! But I don’t even miss the sugary sweets, I’m eating healthy now.
This is one of my favorites. I mix onions and red peppers with eggs and wisk them together. Add a piece of bacon and a glass of tomato juice and I get my day started.I love fruit so a fruit plate is very delicious. I cut up pineapple, added orange slices, blueberries and cherries, then sprinkled with organic coconut. This quick and easy breakfast is delicious! I cut up fresh apples, tossed in some organic cinnamon, coconut and drizzled a small amount of honey over it. The apples are fresh from upstate New York (my hometown) so that made this breakfast super special. Since starting my healthy eating plan, one of the things to go was white bread. I switched to sugar-free wheat bread. I toast it and use organic blackberry fruit spread for a delicious side to go with my eggs. This is my “I don’t have much time but want something filling” breakfast. I blended fresh pineapple and mango chunks, about 1/2 cup crushed ice with a teaspoon of protein powder for a delicious smoothie and added a dollop of organic strawberry fruit spread. Add a KIND Oats and Honey bar and I have a filling breakfast.I have never had fresh mango so when I got one, I tried it a few different ways. For this breakfast I made scrambled eggs with a few slices of the fresh mango and a cup of India Spiced Orange tea.
When I started my healthy eating plan, I was counting all my calories and ingredients but I have since just used my judgement. I will have by liver checked again the end of this month and I’m anxious to see the results since changing my diet. I know I feel a lot better, no bloating and my little stomach valve doesn’t seem to get “stuck” as much. I also can’t eat as much as I use to before getting full and by eating a healthy breakfast, it keeps me going all day. I hope you enjoyed breakfast with me!

Thanks for the variety of breakfasts. I particularly like the protein bar, but I struggle to find one that hasn’t got soya and milk in it. I am practically vegan, however I eat fish. Someone once called me a Vegan Pescatarian!

The organic shredded coconut is my favorite! I add that to almost everything! We’re in the south and the apples here are nothing like a fresh New York State apple! I was surprised when I went to Fresh Market and found apples from a town near where we use to live! Thanks for having breakfast with me Minette!
