Quick, Easy and Filling Meal

There are times when you may not want a three course meal so I’m sharing a Quick, Easy and Filling Meal that only has a few ingredients. The meal is a stuffed artichoke, my hubby’s favorite and it is a meal in itself!

 

Start with a good sided fresh artichoke, cut the stem close to the body and then cut the top about one inch down.  The leaves on an artichoke have little sharp points and the next step is to cut to top of each individual leaves, being careful of the points.  To remove the top of the leaves, you can either cut them with a sharp knife or use kitchen shears to snip each on off.  After this step is completed, run water through the artichoke leaves and open them up.

 

 

The stuffing I make is very easy, it’s just Italian breadcrumbs and oil mixture.  Start out with breadcrumbs in a bowl and add just enough oil to moisten the breadcrumbs.  Add more oil as needed to get the perfect consistency.  If you like cheese, you can also sprinkle Parmesan cheese in the mixture.   To stuff the artichoke, take spoonfuls of the breadcrumb mixture and stuff in between each leave.

 

There are a few different ways to cook your artichoke, one is to steam it in a double boiler and the other is to just add about 3/4″ of water to the bottom of a pan, stand the artichoke in the water and bring it to a boil. Turn to medium heat, cover and cook until tender. You will want to check it to make sure the water hasn’t boiled out, but if it gets low, just add more to keep the artichoke from burning.  Cooking time depends on the size of your artichoke but it usually takes about 45 minutes to an hour.

 

If you like stuffed artichokes, the wait is worth it and it’s so filling that nothing else is needed to go with this quick, easy and filling meal, not to mention that it’s also healthy. To eat the artichoke, start removing the leaves, one at a time from the outside, working your way to the inside.  The inside of the leave has a “meaty” part and you eat that with the stuffing.   Once you get to the inside, you come to the heart where there isn’t any stuffing but it’s very soft and editable.

    Wow! I’ve only tried to cooked artichokes once – I love them but failed miserably. This sounds delicious. Can’t wait to try it.

      Try it Debbie and you will find you can eat them more often! The one thing to watch for is the water boiling out of the pan. A burnt artichoke smells terrible! LOL I’d love to know if you make one and what you think of it. Thanks for stepping in my kitchen.

    I have never eaten artichoke. Your directions are clear enough that even I might be able to make this because it looks very good.

      I’m not a big fan of them Nita but my hubby loves them. When our daughter was a few years old, she would devour them! You don’t eat the leaves, just sorta “scrape” the “meaty” part of the leaf with the stuffing over your teeth. That’s about the best way I can explain how to eat them. LOL Thanks for stopping by.
