Quick But Delicious Dinner
There are times when I don’t plan what we’re having for dinner before we leave for work. On those days, we usually just pull something out of the freezer that I can cook up without having to thaw it out or just have sandwiches. Today hubby and I were both hungry but I didn’t have a plan until I remembered I had a few leftover strips of sirloin steak that I grilled the other night. That was the starting of our quick but delicious dinner.
Since I recently received an induction burner, I love using that for stir fry so my dinner started out with an onion and pepper, cut in thin slices. (I didn’t even cut my finger using my ceramic knives this time!!) I took the two pieces of leftover steak and cut that in small pieces also. I’m amazed at how much farther just a few pieces of meat go when cutting it in pieces and adding it to vegetables. Food cooks so fast on the induction burner plus it doesn’t get mushy when cooking it up. I sprayed the bottom of the pan with oil, added the onions, peppers, and steak and set on the burner to start cooking. I had already had a pan ready to scramble up some eggs so I poured the egg mixture in a frying pan and cooked them up. By this time, the vegetables and steak were all ready done.
Eggs were just about ready to add the steak and vegetables on top of them and then I topped off with shredded cheese. I covered the pan to let the cheese melt and dinner was ready in a total of about ten minutes!
Hubby doesn’t like cheese so I made him egg sandwiches with a side order of the onion, peppers and steak. I love a meal like this, it’s not only quick and easy, it’s inexpensive but very filling. This is one of the meals that I call having breakfast for dinner!

I love making quick dinners. Breakfast is a good quick meal. I had an egg sandwich for lunch yesterday.
I can get filled up on a dinner like this very easily. Eggs were on sale for 50 cents a dozen so I stocked up! Maybe hard boiled eggs next! Thanks for stopping by Sandy.
