Quick and Easy Omelette
Are you hungry? It’s been awhile since I shared a recipe so here’s my quick and easy omelette recipe!
Recipe
2 eggs
Chopped ham (about a tablespoon full)
Broccoli pieces (cut 3 – 4 florets in smaller pieces)
Diced onions (to you liking)
Shredded cheese (one tablespoon) plus more to sprinkle on top
Milk (just a splash)
Seasoning to taste
Mix all the ingredients together. Heat a tablespoon of butter with a drizzle of avocado oil around the pan and when heated up add the ingredients. With a spatula I push the egg mixture to keep it together. Brown one side then flip to continue cooking. Just before it’s done I sprinkle more cheese to the top, cover it and with the heat turned down let the cheese melt.
This is a quick and easy meal for breakfast, lunch or dinner!
How can I say no to this face? Snowball jumps in his chair and patiently waits for breakfast to be served. Disclosure: Yes Snowball is eating at the table, he’s clean, well mannered, doesn’t throw his food around and eats everything in his dish. He’s a little person that just looks a little different.
This is another version, basically the same recipe but using one egg and cut down the amount of ham and broccoli. This is my breakfast in a bowl meal that is also great for a snack!

Martha, how delightful! Your preferred ingredients are so similar to mine. At one time, I had a collection of iron skillets, and one was the perfect size for your/my two-egg omelet. Yum yum! Thanks for another mealtime inspiration.
I could eat these for any meal Kebba! I do have a smaller pan and my granddaughter has a little round one that she can put the ingredients in and microwave it! We’ll make omelettes together miles apart someday!
The omelet looks great, Martha! I have a silicone egg bite gadget that you put your egg mixture in and pop it in the microwave. I think your recipe would be fantastic as egg bites! Snowball is adorable!! Looks similar in the face to my old dog, Muffin. She was such a sweet dog. I miss her a lot.
My granddaughter has one of the silicone egg cooker Jodi! I’ll have to get one and try the egg bites! Even Snowball loves his eggs!

My son brings us eggs, so I’m a bit spoiled, and skip the cheese.
I tend to sauté greens (kale, chard, mallow leaves etc) with onions, mushrooms and fresh herbs, then stir in an egg. If I have a batch proofing, I might add a bit of my gluten free sourdough, and some garlic toward the end.
Fresh avocado is nice on top!
Oh that sounds yummy Nadya! I do put onions and sometimes spinach instead of broccoli but the sourdough bread sounds like a delicious side to the omelette! That’s my next project, to try to make sourdough bread.

Yes Snowball is a little person to me Tamara! My daughter once said, “he’s on the table!” I said no, he’s on the chair. LOL

Well Jeanine, this is a meal you can have whenever! I love these even for dinner and Snowball could eat them anytime too. He is so patient waiting to eat.
