Quick and Easy Meals
I’m all for coming up with quick and easy meals. If they are from leftovers it’s even better because I can come up with something different from the leftovers. Here are a few of my creations.
I don’t care for bread that much but I love a BLT. This is my bacon and tomato sandwich wrapped with lettuce. I add cheese to these too! A very tasty BLT!
We had breaded chicken fingers for dinner a week ago. There were three chicken fingers left over, not enough for another meal…..or was there? I cut up the chicken, added a cut up hard boiled egg and a tablespoon of pickle relish to my mini chopper and pulsed it about a minute. I added a scant tablespoon of mayonnaise and mixed with the other ingredients. I put the chicken salad on half of a tortilla and lettuce and tomato on the other half. My chicken salad tortilla was delicious!
But I still had enough chicken salad leftover from the leftovers for another meal! I opted for a simple but filling meal of the chicken salad with crackers.
Back to a breadless meal. I like to make a bacon cheeseburger with grilled onions between the cheese and bacon. I start with a lettuce leaf and add tomatoes then top with the bacon, cheese burger. My burgers without bread are just as filling and even more delicious because I taste the food more than the bread.
I’m ending my quick and easy meals with a big smile. Start with lettuce, add layer of tomatoes then cheese, more tomatoes and bacon. Add another tomato, cheese and top with more bacon. This was so good! When I posted this sandwich on FB a few of my friends pointed out a smile. After taking another look I saw a big smile with cheese teeth! Do you see the big mouth sandwich?
That was the first thing I thought — a big tomato and cheese smile! These are great ideas!

Love these. But I can see they’re knife and fork sandwiches. You can’t pick these up. And I love bread. But I would try these. And BLT’s do need the cheese!
Yes other than the lettuce wrap a fork is a must Anna. I cut way down on bread two years ago when I went on my healthy eating plan for non-alcoholic liver disease.
very nice collection and you are ket0 without knowing or maybe you do know. These are the kinds of sandwiches one would find in a keto cookbook and be so happy. I don’t eat bread at all so all of these are great for me.
Cool, I didn’t realize they were Keto but they sure were delicious. When I went on my healthy eating plan two years ago, bread was one of the things to go Chef William.

Martha, I love this! Many times, I have done the equivalent of turning 3 chicken fingers into 2 meals. Tasty food fills us more quickly and sticks with us longer than Just Any Food. <3
I remember way back when I was young, my grandmother could make a meal out of almost nothing. Im thankful I learned so much from her. Yes tasty food fills us up and it’s almost a challenge for me to see what I can make our of hardly anything Kebba.

I didn’t even notice the smile until someone mentioned it Amrita. I’ve had that happen many times, the other day I made the pound cake and people say an eyeball in the middle of the pan!
I am not one for Bread either and always only eat one piece if I eat a Hamburger. As for Lettuce and Wraps I don’t eat much of them either but with a diet I should as it’s healthier.
Gotta eat your greens Glenda! One of the worse things to eat when on a diet is white bread. I cut that out 2 years ago when I was diagnosed with non-alcoholic fatty liver disease and lost over 24 pounds in 4 weeks.
